Hey from PA I am North of Pittsburgh. I just got my first grill June 4 and I just added a second one a few days ago. I had spent time as a meat prep cook but never actually got to cook the meat until now. When you work under chefs you do all the work and they take all the credit. Which is ok by me I learned a lot from them and now I apply it to my BBQ. I have 2 weber Kettle Grills both 18.5" and I want to get bigger ones but hey money is tight and I work with what I have got. I have already done chicken legs and breasts and my first whole chicken last night. I have done Baby Back Ribs and Pork Shoulder and not that many days ago a full size 9lb brisket. I figured out how to use the kettle as a smoker which works amazingly well. Longest cook currently I have done is 16 hours straight. I had a blast. I figure I would join this forum to talk BBQ and learn as much as I can from the vets and other BBQ lovers. Oh yeah almost forgot my name is Tom and I am a BBQ Addict. I even have already come up with my own BBQ sauce what can I say I did not love any particular sauce and just decided to wing it a few times and I finally hit on something. At least something my wife and my friends agree is really good. I want to get into competition BBQ some day but for now I am going to work with my recipes. I hope this isn't to much information. So great to meet all of you and I hope I can contribute to the forum.
