Hi everybody, happy I've found this place! I stumbled on here googling advice on building a brick smokehouse/grill, and felt very inspired by the idea of an online barbecue forum. Been seriously grilling for 3 years now, and my results have been good so far. Learned how to smoke everything from jerky and chicken wings to whole hogs while running the catering side of a butcher shop, currently working at a family fine dining establishment as a line cook . Currently working with a OTS and WSM, also really enjoyed smoking a whole hog in a temporary cinder block oven i've built a couple times. I'm a huge fan of cajun cooking, s othose flavors come out in my recipes as often as possible. Dreaming of owning a southern comfort food and barbecue bar and grill in my future. Really looking forwar dto getting to know everybody!

Hi nthole, thanks for the warm midwest welcome. I work at Pastaria in Clayton, have you been? I'd rather not say thename of the butcher shop though, bad experience working there. It is run by old friends of my parents, and I'd rather not slag their business with my horror stories. Best if they remain anonymous.

Totally understand. I don't get to Clayton much, but I have heard good things. I might have to have a lunch meeting in Clayton just to try it!
