G'day everyone, a big hello from Melbourne the waste land of Q.

Been doing backyard cooking for a few years now, using a standard Aussie 4 burner gasser. Stumbling into smoking couple of years back when I saw this guy on TV (American TV, that is) cooking a brisket.

So far has done beef jerky, brisket, pork butts, ribs, pork belly, lamb shoulder......not always tasting great, but always lots of fun:-D

There is so much to learn, the confusion in language did not help - you call boston butt or shoulder we call pork neck, our pork shoulder is actually your picnic butt, there is no such thing as SLC here, just spare ribs, tenderloin is actually pork fillet........:blabla:

Look forward to lots more fun here, planning to build myself a UDS once I get a permit from the higher authority:becky:
