Hi everyone, thanks for letting me into the circle!

Writing from the Gold Coast, Queensland Australia.

I am an old hand at cooking and especially Aussie-style BBQ's, but very keen to learn about smoking, slow cooking and everything U.S. BBQ!

We do love a BBQ over here, but when it comes to cooking outdoors we are pretty much a steak, snags (sausages) and chops sort of country (oh and the ubiquitous shrimp/prawn of course). And as good as that may be, I just don't think it compares to the results you guys get from smoking, slow-cooking and using cuts like brisket and racks of ribs.

Though it is starting to catch on in Australia and I am sure will be pretty popular soon, so trying to get ahead of the curve.

So much to learn here it is amazing, a huge knowledge and experience base and I look forward to taking part where I can.

Keen to talk to any other Aussies who may be on here as well, maybe we can share tips and where to get gear etc. also.
