Hey Everyone,

Let me start by saying I have never smoked anything in my life. My backyard BBQ expertise is limited to steaks and burgers on my Weber grill...maybe a chicken breast can find its way on there. I've lived on Long Island my entire life and have never really been exposed to really good BBQ until a few years ago when some smaller BBQ restaurants started popping up here and there. While some were good, others were terrible...and most all were inconsistant.

So like everything in life, if you need something done right, do it yourself. I've always wanted to get a smoker but never did because I thought I would end up not using it due to my lack of knowledge and falling back to my grill for simple things once again. Recently I was able to acquire a brand new Brinkmann Smoke N' Grill at no cost. So I figured this was as good a time as any to start learning how to smoke meat. I've researched almost every ECB mod I could find on the web and I will be starting that process this weekend. I'm looking forward to (and frankly DEPENDANT on) getting some great advice from all of you who for Tips tricks and, of course, recipes!

I'm going to try some pulled pork first...then I'll try some ribs (I'm absolutely in love with the St. Louis ribs at Famous Daves. I know its a big chain, but on LI choices are limited).

Welcome to the Brethren.

What type of Weber grill are you using?

There's lots of Brethren from Long Island. You should definitely try to make it down to one of the BBQ events around the Island. There's one this Sunday in Westbury and another in Manorville in August.

Thanks for the warm reception everyone! I had no idea LI was so strongly represented here. I currently live in Stony Brook, but I grew up in Oakdale. My Grill is a Weber Genesis Silver B which I've had for about 8 or 9 years now. I've only had to replace the Flavor bars and grates last year. It's quite the workhorse.

As for the events, I probably wont be able to make the Westbury one, but I should definitely be able to make the battle in Manorville.
