Ive known about UDS smokers for the longest time but for some reason I never looked into it until a few weeks ago. Since then I got a drum and built a UDS consisting of


Free Drum :grin:
Two 22.5" Weber hinged cooking grates @ 3" and 8" from top
Charcoal basket made out of 3/4" expanded metal & 22.5" charcoal grate (holds 20 lbs)
Small shelf to hold my Maverick ET 732
Two 3/4" air inlets
All stainless steel nuts and bolts

I burned out the barrel on Wednesday and Friday night I started drilling and assembling the beast.

It took me longer to get things the way I wanted them Saturday morning so I ran out and got a single rack of pork ribs from the butcher. I had them going at 300 for 5 hours :cry: which overcooked them. Sunday I had nothing to do and got to throw on my 7 lb boston butt (rubbed with mustard, pepper and a little salt) at 10:30 AM @ 270 - 310 for the entire cook time. Eight hours later at 6:40 PM she hit 200 internal, I had 5 baseball size chunks of apple wood in my basket with 8.8 lbs cowboy lump.
