Hi All,

I"m Stephen, team captain and chef of team Rhino Ribs. I've been cooking in backyard tournaments with my father-in-law since 2006 and cooked in my first prop tournement this past weekend at the Roman Roast on the River in Rome, GA. Needless to say there were a lot of things learned in this event and it was a real eye opener. I have 3 cookers, depending on the event and if I've vending\catering, 2 of which are custom built and the 3rd is a Weber One Touch 22.5" Gold.

The cooker on the right is my best cooker by far, all stainless construction holds heat with very little fuel.

The monster on the far left, I hate, it's too big and doesn't hold heat well at all, I use it more as a grill than a smoker.

I have always setup my pit with a couple of tents and tables but found a deal on a lightly used travel trailer last may and bought it so we now have a nice place for prep and to sleep.

I'm still learning alot and hope to learn more on this forum, especially about brisket which is my worse category by far.
