Quick Announcement:

for the past few years, Ocean Spray Pools and Spas, backed by BGE, have supplied us with 5 Big green Eggs to use during the Ultimate Grilling Challenge, our own Iron Chef Style cookoff.

Ocean Spray is no longer affiliated with BGE so will not be a sponsor of the event. Without them, we will not be having the iron chef challenge.


This has NO EFFECT on the NEBS Grilling which will still take place.

The IRON CHEF CHALLENGE IS BACK ON.

Same as the past 2 years, the winners of the 4 categories in the NEBS grilling event will advance to a fifth round, Iron Chef Style shootout, using mystery ingredients. The catch is, there will be a professional chef as a 5th competitor who you will have to beat for a winner take all cash prize.

Yup, You missed it.

Pork

Pork is defined as a Whole Shoulder, Butt, or Boston Butt, or Picnic. Starting weight must be 5.25 lb. minimum. Tenderloins, Loins and pre-trimmed "money muscles" are not permitted.

Pork must be cooked whole to 145 degrees Fahrenheit, after which it may be manipulated and finished at the cook’s discretion. For health safety, a temperature of 145 must be maintained until delivery to the judges.

Pork may be submitted as a combination of styles or single style; such as Pulled, Sliced, Chopped or Diced. Bark, the outer layer of the pork, is also acceptable as part of your entry.



So, that means that once you cooked the butt to a safe serving temp of 145, you may do what ever you damn well please! :grin:

There will be a food drive at the event for an adjunct of Island Harvest.

We have worked with these folks extensively and they do a great job.

If you were so inclined as to let your guests know that a few cans of food would be appreciated or if you have any leftovers from your turn-ins, it would be greatly appreciated.

I see the scoring is different. What program is being used. Do we just have someone entering scores in a spreadsheet? Lot of talk recently about scoring lately so just curious. Should we expect team printouts?

Do all 6 scores count? I do not see anything in scoring about dropping the lowest score.

OK. That stinks. Thought we were going to get 10 contests in for TOY scoring but not so (not that it matters but wanted to see how we fared with a full 10 contests counting). So now I have some questions.

When we decided to have the contest after all, we were inside the 90 days required for KCBS so we sanctioned with MABA and BBQ Brethren, which ARE recognized by the Jack And AR.

CBJs? percentage?

We are currently 100% CBJ. We will know final % at the contest because we never know who will not show up. We do have extras onsite to cover no shows, but we always look for 100% CBJ. Additionally, Judging refreshers are ALWAYS given from at 9AM to 11am the morning of judging.

I see the scoring is different. What program is being used. Do we just have someone entering scores in a spreadsheet? Lot of talk recently about scoring lately so just curious. Should we expect team printouts?

We drop the lowest score. Our scoring system was professionally written in C# and Visual Basic over the course of almost 2 years of testing. Its not a basic spreadsheet and yes you will get a printout. Differences are: Scoring uses half point intervals and texture tenderness is weighted highest.

Rules say 'yes' but I would like confirmation on these:
Are 7 samples going to be required with each entry?

By the BBQ Brethren rules, 7 samples are required in the boxes. This was done to give the table captain a sample just in case a judges score does not make sense, he or she will then have something to sample before reporting to the reps, and it also makes it easier for a judge to be assigned table captains. However, we have taken team feedback from other BBQ Brethren events into consideration and during the cooks meeting the contest reps will discuss with the teams allowing 6 pieces for chicken ONLY.

Returning to 6 pieces is on the list for the rules committee for a possible change next year.


Are beef ribs going to be accepted in the beef category?

BBQ-Brethren category is a BEEF category, not Brisket. It can be Long Bone short Ribs or Brisket, or a combination of each.

The ribs must be Long Bone Short ribs (A.K.A Dinosaur bone). A minimum 3 bone rack must be cooked complete and ON the bone and sliced off for turn in.

Yes, thats them. Make sure they are not cut too short.. sometimes, when purchased at a butcher, Ive had them cut to 4-5 inchs where the butcher cuts the plate in half. Problem there is that they shrink to nothing and sometims one half is nothing but fat. Thats why we look for the whole plate. Restaurant depot sells the full plates like in the picture above.

Dino bones are one of my favorites, and i find them more challenging than brisket to get them dead on. I learned to cook them from Adam Perry Lang and still cant duplicate his.. I think it was an awesome idea of our rules committee to include them in the contests. It brings us outside of our comfort zones and gives us a different challenge.

I think I may sign up for judging. Would that be allowed? :twitch::twitch::twitch: (thats a joke)

I'd like to remind everyone that there will be a food drive at the event for an adjunct of Island Harvest.

If you have any extra food after your turn-ins that you would like to donate, please let me know.

If you have guests coming and could ask them to bring a can or two for the food drive, that would be great as well.

If you need wood for the event, you might want to consider LI Firewood.

They are pretty local to the contest, they have great wood and they have supported Brethren charity events in the past.

They might be able to deliver on Saturday.

Thanks to everyone that participated. Cooks, judges, folks that came down to say 'hi' (some Brethren that weren't able to compete this year, some Brethren I haven't seen in years). It was a really fun weekend.

The weather yesterday was beautiful. Everyone I ran into seemed happy and appeared to be having a good time. The bands on Saturday and Sunday were great.

A really fun weekend. And who was it with the donuts Saturday night? Those were AMAZING. A team with a deep fryer made their own donuts and were walking around sharing them with fellow teams and organizers. They need to be the first folks to sign up for the 8th Annual Battle of the BBQ Brethren.

Congrats to Tim and the Stubborn Bull folks.

I really enjoy this event, all the gossip and nonsense that goes on is so entertaining to me. Phil and Steve going chest to chest at 8am, who's talking smack about who because they said this about them! hahaha. One of my favorite events just for the entertainment! But Phil you do a great job running the event, you do even a better job training your side kicks to help things run smoothly. Congrats to you and all that made this another successful year. the chit talking is my favorite part! and the only reason i rolled out of bed at 6am on a sunday and made my way there, and i wasn't even competing this year! Always great to see all the brethren. Make fun of each other, and hang out. I was 5 miles away from the event and I could smell the smoke when I pulled in my driveway saturday night.

I've been to a lot of BBQ contests in a lot of places over a lot of decades :) and the Battle of the Brethren is as good as it gets. The reasons for being there are so genuine. I came to see some old friends and have some fun but that was the easy part. I also got to help Phil by coming and when you see how hard he works just to carry on the Brethren love and how hard everyone else (Kyle) works to help him it's worth the trip just for that. Then add in solid power, water, shade trees, good money, a well run judging tent, and all the friendly Long Islanders, and...well I'm really glad I made the trip. Cheers to you Phil!

Congratulations to our GC Stubborn Bull and RGC Jacked Up, and to all those that walked.. Even if you didnt get a walk, as long as you had a good time, and picked up a thing or 2, it was a success.

There were some major players behind the scenes that helped make this happen that I'l like to thank publicly.

Kyle did a lot of the leg work i couldnt get out to do and was with me around the clock for the past few months. Theres a huge amount of small things that need attention in the weeks leading up to an event this large and in the short amount of time we had to do it, he was key.

Motoeric as always got us some awesome prizes for the raffle and gets word out to the media. Skip and Westex get items for the infrastructure.. and as usual grim reapers were on hand to help get the site setup.

WillieB ran our vending site to help raise money for the John Theissen Childrens Foundation with Matt of Jacked Up backing us up as well as supplying a xanax to save sleds life. One of the most important jobs went to Tom Duval and Boogiesnap who took care of the food and service of our V.I.P tent. We lost some of our sponsors from previous years but picked up some major players this year. Boogiesnap kept our food flowing, did some demos for our sponsors and made them feel like a V.I.P. Tom ensured that the tent was presentable, kept the general public out so the sponsors had some place to relax, made sure the beer taps were full and working and coolers never ran dry. Keeping our sponsors happy and engaged will be key to the event next year(August 2-3) and they did great..

and my kids who work their asses off all weekend lugging ice, trash and tending to anything that needs attention, and of course to the teams and judgesthat come down to make it happen.

Theres alot that goes into this event and I thank everyone that helped and hope i didn't forget anyone.

and now that its over i dont know what to do with myself.... think im going to disneyworld. :mrgreen:

Babylon Grillbillies would like to thank Phil and all who helped put on another stellar event at the maples. Keeps getting better and better Congrats to stubbon bull and jacked up on GC and Reserve. Also Blazin butts on winning the grill cook for the 6th year straight maybe we get you next year.

Congrats to Stubborn Bull & Jacked up! Matt & Steve made it look effortless. Also to Blazin Butts & Babylon Grillbillies for grilling. As always it was a great event. Thanks to Phil (and his whole family), Eric, Kyle and everyone else that worked so hard on this event. It was great to see everyone and hang out with friends, old & new. Phil thanks for putting a request in for good weather too. It was probably the best comp weather I've ever seen.

Just wanted to say thanks to Phil and Kyle and everyone else responsible for putting on a great event! MY second competition and it was a pleasure from beginning to end! Thanks guys, can't wait for next year.

Also, great to meet a bunch of the fine people competing, as a newb I very much appreciate the hospitality.

They couldn't keep up with the two garbage cans they had on site. Great venue, awesome everything, last year the garbage guys were great this year they seemed like since they grew pubic hair they got cocky and lazy.

Actually, last year there were 4 garbage guys including james and ryan. This year I hired 4 from the dumpster company and James and Ryan were in charge of ice delivery and all the other stuff that pops up.

Trash guys showed Saturday, but were no shows on Sunday so james and ryan picked up that too. (BTW.. 25 trash cans on site)

there will always be something... but this year went pretty smooth once we rebuilt the squashed electric panel. :wacko:

no garbage pick up for jacked up. I don't mind though. Electric was better this year, actually perfect. the sunday garbage guys actually asked me what I was going to do with my garbage, the kind guy I am I loaded and brought back myself.
