I just registered on the forum recently... I was sent here by bigmista. Looks like a nice forum... and obivously lots of info.

I've been barbecuing for a couple of years only, but started last year in a couple of comps. We're learning a lot... and have a lot to learn! But instead of attending some comps, we just jumped in and tried it out. We didn't come in last in anything, which was my goal. I took the KCBS judge's class last month to learn some more, and am now thinknig about a cooking class to push myself a bit more.

I do more than outdoor cooking, but that's my favorite way to cook year 'round.

Just thought I'd say hi.

I already see that I have to push myself on getting my next smoker...I've used a couple Chargrillers and a WSM... but have hopes of building something soon.

Ed, nice site... I like the JD on the equipment page... but Maker's Mark is better for what ails you!

Welcome to the site Curt. I see why Mista sent you here, you guys have a lot in common. Nice blog, by the way. I am going to try your Steak au Poivre recipe. It is one of my favorites. Sounds like you know your wine too. Excellent.

That's basically Alton Brown's recipe, but I wanted to show the steps. The one thing I would add to the sauce is I think I would put shallots in it, too, just to add a little something, but the basic recipe is still great.

Actually, it's Warren County... just about as far from Mentor as you can get and still be in Ohio.

Kevin, I've had several volunteers to test... I think by the time you'd get here, it would all be gone!

Welcome Curt. Since you're shopping around for a new smoker, try to find a Bandera. Thats what started it all here.

We're thinking of building one, as much for the fun as anything. I can get steel at cost from a local company, and I have a welder that's going to help. I'm trying to find out if we have a free heavy duty trailer from a mobile home available to us... we just have to remove the mobile home and can use the trailer pieces as needed. Then we want something not too huge, but not too not huge at the same time!

We thought we'd scale it down a bit. :) But, after Madison last year, thought we could put a kitchen on the platform to provide A/C!
