hey everyone quick question about Trimming meat for competitions can I trim the meat a day ahead of the contest?

Yes for KCBS sanctioned comps. I can't comment for other sanctioning bodies.

But, you cannot brine, inject or season until after meat inspection for KCBS comps

I always trim chicken before contest just to keep cross contamination risk low.
