So after a pretty good payday at the Houston rodeo go-Texan cookoff for our area and beating alot of teams that were Prettey heavy hitters, we did it again. This time in La Grange Tx, First sanctioned cookoff of the year, first GC of the year. 31 teams, cleaned up pretty good.
1st chefs choice
3rd pinto beans
Oh yeah baby! I don't know who yelled louder, me or my wife! Who cares, a other GC under the belt.
Oh yeah, we comin this year. Lol first qualifier, it's nice not to have to chase it if we decide to go.

I was the happiest to find out that we beat the meridian, tx state chicken champions. Their name was like twisted system or something. My buddy Jason got RGC 1st chicken and 5th brisket. He glazed his chicken, I went with dry. Oh well turned out pretty dang good. I got to taste first place brisket and it was decent but one of the judges that was still afterwards told me I would of won the brisket if I didn't use the TQ. I have to admit it was a helluva big smoke ring, we turned in the briskie fat side up to try and hide that monster some. Damn I only left it on for 15 minutes, but I think the fact that I used the fresh cherry wood, it made it even darker and a little unnatural looking

Awesome. So you rinse off TQ?

Speakin of alcohol in one of the threads last night we had alot of it. i got some of my numbers mixed and transposed and even some Categeories. they didn't even have chefs choice! That was the last cookoff. Damn brown water, tequila and beer. Anyways we got 11th pintos. Only bad decision we made last night from
Celebrating and dancing was to have a foot race. I am

Uh. Why not? No big deal, Brenham is one of the places I liked as a kid, and want to take my boys there (4 and 7). Wife would come too. We thought we'd see you while we were there. No biggie.

Yeah, she likes to run 300 so I let her. Still runnin dry but i put foil on the drip pan to make cleanup a helluva lot easier. My ribs were done in 3 hrs instead of the usual 4 but they were still pretty good. It's definitely a brisket Cookin fool. Didn't use one single probe in the brisket the whole time. I used the thermapen just to verify what I thought was right, I can start to tell by looks and feel once its through the stall and when I need to wrap it and when it's buttah tender.
