I just got an opportunity to taste it.

First impressions:

A tad bit of Sweet on the front, a really nice taste full on, with a tad bit of heat on the back.


All in all a really balanced rub from first impressions.

I like it quite a lot.
Can't wait to taste it on some brisky!

In the meantime though, I'm thinking this will be a killer rub for the Christmas prime rib.

I just got mine. First impression is great. Very fresh, nice uniform grind, and seems well balanced. Going to have to wait until I get back from the my Xmas trip to get it all over a delicious brisket. I will try and post some pics. THANKS MIKE!!

I got mine yesterday as well. I did the finger test and I liked it. I'm not sure when I'll do my next brisket because I was up all night the night before last cooking brisket and pork for co-workers. :twitch:

This will be on the next brisket.

Chances are good! We'll ship it out tomorrow morning, so it should be on your door by Christmas Eve, if we're lucky. If not, you'll have it the day after Christmas.

I just got back from being on the road today and there was a present on my desk. The aroma smells amazing. Like SCSmoke said, the consistency to the grind is great. I like uniformity to my rubs. Once you taste Black Ops, it literally melts on your tongue. The flavor has a fresh taste to it and it's well balanced. No one spice is strong than the other, but they all work well. Then there is a little touch of heat. I look forward to throwing this on a flat next week. Thank you Mike.

You're gonna LOVE that HDD! One of my all time favorite spicy rubs. I haven't used the Black Ops yet, just had a taste, but I'm expecting great things from it too.

That's interesting...I did notice that I could still taste the rub (in a good way) for what seemed like a long time after I tasted it.

Some co-workers of mine missed out on the brisket I cooked for a holiday potluck about a week ago. They'd had my brisket before and we're bummed about arriving too late. One of them offered to pay for a brisket if I cooked it for the team. I figured that was a sign that they really were bummed about missing it. I didn't accept any $s from them and was planning on cooking one for the team sometime but just wasn't sure when.

When the Black Ops rub arrived on Wed, it was clear the time had come. I ran out that night & picked up a 13 1/2 lb packer. With the Mayan Doomsday coming I figured this might be my last meal!

On Thurs night I opened up this:

I gave the rub a little taste and got some heat, a little sweet, and a hint of the onion. Initially I had a bit of concern that one coworker might find the heat too much but figured it wouldn't be as noticeable on the cooked brisket.

I applied the Black Ops on the trimmed Doomsday Brisket & got it on the Large Egg and went to bed. This was in the AM more than mid-way through the cook:

And this was it off the Egg while wrapping it in foil before placing it in a cooler for the rest/hold until lunch at the office:

I find it hard to take good pron while at work as hungry coworkers don't seem to care about me needing pics and I rarely take my DSLR to work. Here's a couple of shots of the Black Ops brisket taken by a coworker with a point & shoot before the feast began:

The nine of us almost finished it all off! I have no doubt that we would have eaten it all if there weren't various salads and snacks also being consumed.

Overall the brisket was enjoyed by all. The Black Ops rub had a nice balanced flavor and was not too hot by for anyone. I think I could have applied it a little more liberally, as per the instructions, but I was a little reserved because of the one coworker who really avoids spicy (he ate as much as anyone so my concerns were for nothing). We were happy with the bark as well.

Methinks the Sis-in-law will wet her panties over the 4 packages she's getting. (She cooks on a Weber gasser though. At least it's a Weber. Maybe next year I get her a CL Weber kettle.)

I took a little taste of the Black Ops rub. Can't wait to give it a try on a piece of meat!

I tried the Black ops on burgers and a chuck roast. I must say I really like the well balanced flavor and freshness. When you open the package and give it a smell youll know what I mean by fresh!

We used the BlackOps on our Christmas Prime Rib this year. Absolutely FAN FARKING TASTICK!!!

Bill, you have a very refined palate.

Yes, there is a very subtle mushroom profile on the back end. The vast majority of our test subjects could identify the presence of "something", a savory note, very unique and pleasing, on the back end, but only a select few could further classify its identity it as the Shiitake mushrooms. Great job!

I'm one of the couldn't specifically ID ingredient, if I hadn't known it was there. However, seeing shiitake listed I knew exactly where it came from. Brilliant call for this rub, I say.
Kinda like the ginger in Dale's Steak Seasoning.
