Smoker, the food police would say to throw them away before you cook them, just to be safe.:shock:

Seriously, though: It somewhat depends on your fridge. Smoked ribs cooked to the temps we usually do, in a smoky environment, are good to store in a standard home fridge for at least a week, probably two. If you have a modern fridge, with a good meat drawer, you may go a little longer. My Kithenaid meat drawer is set to maintain 33 degrees constant. I am apt to eat something like ribs that have been in there for three weeks or better.
I really think that the issue is whether they are still edible from the taste and texture standpoint, as opposed to the food safty standpoint. About 10 days does it for me on that criteria.
Of course, this is based on a good, strong fridge. If you have an older unit, it may not perform as well.

besides, the smoke also acts as a bit of a preserative.. I have gone 2 weeks in the garage fridge which runs just above freezing.

I have truble, keeping them in the fridge for more than 2 days. Interesting....

My general rule: if it stinks, throw it out; if it's green and didn't start that way, throw it out; if it looks "slimy" as opposed to greasy, throw it out!

Common sense comes into play - if you can't remember when you cooked them - throw them out!

I keep them for about 3 days. If I plan on keeping them longer than that, I just smoke extra, shrink wrap the extra and freeze them. They will last a year like that. Then, even if you can't smoke, you always have some good ribs to heat up in a minute and chow out.

If I plan to have anything for more than 3-4 days I freeze it in foil. Never lasts even in the freezer more than a week or so!
