I've competed in a couple of LSBS sanctioned events, and am curious if the judges are only allowed to eat the pork ribs with a knife and fork. In other word, not allowed to pick them up with their hands like normal people do? Anybody know??

A knife and fork are your friend and must be used. That rib will be shared with at least four other judges and they don't want no nasty paw prints on them.

Yep, cleanliness. And get a new knife & fork for each sample.
