When it comes to competition chicken, I'm still learning the ropes. I know you want at least 6 uniform pieces of chicken, but what is more important?
Larger thighs with more meat so they fill in the box...or
Smaller thighs to get more than 6 in a box?
Whatever has the best moisture content for you. Either works.

Quality first ... then fill the box.
As was told to me ... "only put good meat in the box"

Whichever size you cook the best. If you go with the smaller thighs I think it does help the appearance score if you put more in to fill the box. keith

I typically include six pieces. At Rockford, I crammed nine pieces in and made a mess of the box with sauce smudges everywhere. Took us five minutes longer to get the box in due to the mess I made. Our appearance scores were 9,9,9,9,8,8 so I don't think it hurt us much. As others said, don't turn in sub-par meat just to fill the box. Only turn in pieces you are okay with being judged on.
