Lost salad portioning worksheet

Somehow in my change over to a new computer I lost my notes for how much spring mix salad is needed for 100 people. I have a 180 person catering job coming up and when I went to itemize what I needed to buy I had everything but the salad numbers. Does anyone have a calculation they use that they would share?

I buy a 3# spring mix box at R-D and it feeds 75 people. It seems like a lot of people for only 3# but spring mix really poofs up and you can't get much in a 3 compartment plate.
