Need some tips for chicken, my flavor profile is good, just can't get the shin were it needs to be, just pulls away, I use thighs, and I have been removing the bone, is that a wise idea? Any help will be great.

Have you tried high heat? 350+

yes, really, my first answer is the best to find out how and why what works.

but to be more brethren-like...i can get bite through skin in many ways. low and long in the "bath", or very high heat quickly, both scraping and not.

it'll take some experimenting on your part to see what method you like, thus the search suggestion.

look at the bbqbug.com forums for pickled pigs method or mister bob comp chicken for his.

very good starting points.
