View Full Version : 1st Comp Practice - Judge My Boxes

I made brisket and pork simultaneously as practice for my first competition. I was borrowing my cuz's UDS and wanted to get to know it. Also wanted to get used to double-barreled overnight smoking action.

I had a thin flat, cut on a bias to compensate, and tenderness was affected. Won't do that again.

Let me know what you think about my boxes.

Eight on the first and eight or nine on number two. In person I bet it shines.

Pork need more shine/sauce and some "popitude" to get a 9, so 8 for now. Brisky me likes 9.

Suggestion: If you got burnt ends add them and you will probably get 9s from all judges.

Very nice! I agree that a little more shine on the pork would help, but it could be the photo 9 for both

8 on the pork, 9 on the brisket.

On the pork, I'd put a couple more chunks in the the bottom left and top right corners just so there wasn't quite so much garnish showing to bump it up to a 9.

That brisket box is prettier than any I've seen the last two weekends.

Agreed. Brisket looks great! Only complaint is I wish I could see it in person!!! Nice job!

I'd like to say 8 on both of them, but honestly, you wouldrobably get a few 7's from most contests I hit.
The pork looks like it is undercooked.
The brisket looks good but some burnt ends would help the box a lot, or even adding a few more slices.
Nothing there to be ashamed of...I'd hit it!

7 on the pork.. just doesn't appeal to me, like i want to get in there and eat the whole thing.

9 on the brisket. all that's missing is a couple of pieces of bread and a couple of beers !

the brisket is a solid 8.

I'd give eights, low on the first and high on the second.
You pork box feels a bit sparse to me. You've plenty of meat on a butt; why not use it?

9 on the Brisket, looks great.

Not to be an arse, but on the pork I would give it a 7. The some of the chinks look sliced, not pulled - appears under cooked a bit. Also need more of a shine. On the brisket, I would go 7 at best. The slices are awful thick - may be a bit over cooked. The slices are uneven and the slices aren't lined up well (try spacing more uniformly). The sauce is also heavy on the left side of the front slice and there is a black spec. The color of the bark is great and I like the color of the slices other than the sauce issue mentioned previously.

Only reason I am so critical is that when we turn in our clam shells, we are in a beauty contest first, then a BBQ contest second. The judges out here seem to be very critical (much more so than out fellow Brethren) and you need to take more time on the artwork building a box to get 9's.

On a side note, you might want to pack in more parsley so you have an even putting green - I don't rate on the garnish, but I know some judges do, even though they are not suppose to. The way I look at it is that you are showing you have attention to detail.
