View Full Version : best sausage in USA for competition

I am hoping that if we pool our collective knowledge we can put together a list of the best sausages that can be purchased on the Internet. Many kcbs contests have sausage categories, and many of us eat sausages at comps for breakfast and dinner because they are so convenient.

My nomination for the list: Fresh bratwurst from Usinger Sausages. They have a complete line of german style sausages, but I think the bratwurst is the best. Available at http://www.usinger.com/

Just to kick start things I will nominate a second, Edwards smoked sausage links. Never had another southern breakfast sausage that came even close to this. http://virginiatraditions.com/Smoked-Sausage-Links.aspx

So, what's at the top of your sausage list? AND, would you recommend them for competition?

I think Kreuz sells sausage online, seems to me another one of those places sells sausage on line as well

A regional sausage company, Wampler's, sponsors a couple of events by providing meat to each team for a sausage ancillary. More for Fatties if there's extra. The owner is also known to show up to cook a full breakfast with eggs, sausage (of course), biscuits, and gravy for the teams on Saturday morning. I think the sausage is very good, and they really like to support BBQ!

Leos Cajun Corner in Galveston, Texas has been my "Go To" sausage man for years. This is a family business that butchers, grinds and smokes on site daily. Absolutely no preservatives or mystery ingredients. And the best for last, if you want over about 20# he will custon make to your specifications. I normally do this for catering events or larger competetions.

Slovacek's Jalapeno & cheese is darn good. Meyer's also has a good Jap & cheese. But all Meyer's sausage is pretty darn good

I'm assuming Kreuz, Black's and the like are not legal for comps as they are sold pre-cooked.

I know I broke a rule a few years back at New Holland Summerfest when I entered Opa's Jalepeno & Cheese Sausage from Fredricksburg, TX that Jorge got me hooked on... Didn't get DQ'd nor did the meat inspector check.. Think it came in middle of the pack.

After reading this, I really wanna get one of everything and try it out. Who wants to organize a group buy on this and handle the logistics?

Vinny nailed it. The majority of packaged link sausage is already cooked, and is a DQ in many cases. Read the rules carefully.

If you don't live too far from the processor, they may be willing to do a small run for you without cooking it. I've done that with Slovacek in the past but have no idea if they'd still do it since it's been several years.
