J. A. Henckels makes a great poultry shears that unlike many of their knives is reasonably priced. I buy Hinckels knives online from Cutlery & More. They seem to have the best prices and ship quickly.

I picked up a real nice pair of soft-grip poultry shears at Restaurant Depot a few years back, very good and handy to have around both outside and inside.
Brand name is Tablecraft/Edge Resources, very similar to the picture from Slamdunk and priced very reasonable if I remember correctly.

I like the ones from oxo. They come apart for cleaning and are plenty tough.
