Got the book yesterday. Surprised no mention of it here yet. Very,very good read. I like to experiment and enjoy the process, so the book is right up my alley. If you are competing, or going to compete, I recommend it. If you will be competing against me, I'd rather you don't buy it. I haven't cooked in months, but may have to fire up the cooker this weekend. It is definitely in my top 3 bbq cookbooks.

I got it and think its pretty good. The good news is that if you are reading these forums you are on the right track. The key is execution! Im doing a brisket run this weekend! :)

I'm all about foams in high end cuisine (molecular gastronomy FTW), but good luck with that in a BBQ comp. :wink: :laugh:

Ique, my only recommendation is to get it onto Kindle (which also enables it for iPad via Kindle for Ipad). It is free to list and very inexpensive to convert. Don't use the standard Kindle converter though, it's terrible. I am sure your publisher (if you didn't self publish) can do it.

I have some clients that I have printed books for and we published kindle versions as well. They did very well in e-reader format.

Just my $0.02.

I'm on it. You'll probably still want the hard copy as it might take a while. Not to mention one of the best parts of the book is the photography. :)

You are not the only one who enjoyed the pics. Our 8lb Pekingese/Chihuahua furball chewed a hole through the cover. She is not a smart dog, but she does appear to have good taste.

The photography and book are excellent...

Got my copy on 2/6... easy read cover to cover....

I recommend taking both the class and book...

There is a lot more in the class and some stuff is slightly different. I do use commercial products and of course we did everything from scratch in the book. Presentations and the some of the finer points of cooking at a comp arent covered in the book.

chris, any brick and mortar availability? or just amazon?

I'll have copies out at comps this year.

Got my copy yesterday...WOW is a description that comes to mind! Great job to all involved!

Two that I can't wait to try is the Pecan Pie stuffed Cheesecake and the Whole Hog, Pancetta Style!

There are many high end approaches to true BBQ in this book. Definately a nice bridge of the foody into the BBQ world!!!

dumb question... in the section on wet aging a brisket (pp48/49) it says to get the pack date but i don't see what you use it for?

you use it to know how long to wet age. things can (and do) go south if you aren't careful.
You would add 30 days to the pack date, not the date you decided to go and buy it.

The pack date tells you exactly when that meat hit the cryo. Knowing that, you can figure out how long it's been sealed and aging already so you don't age it to long and it spoils.

We received ours last week and were fighting over who got to read it first. :boxing:

The book is awesome :clap2: and we've already tried out some of the recipes. Really enjoyed the commentary and photography that went along with everything as well. Also enjoyed the cocktails chapter at the end of the book – :grin: – Genius! Can’t wait to take the class this coming weekend after reading through the book this past week.

I just went back and re-read that section to see if the info was missed. It looks like it gives the info you were looking for in the last paragragh on page 48 and into page 49. Just offering that up so you know where to reference it for later use if need be.

Got mine as a V-Day present from my wife. I got a high of 50F forecasted for Saturday, so I should be able to sneak a cook in. Really loving the read so far.

I got mine the other day. I thumbed have read the first couple of chapters, and then looked through some of the recipes. Very interesting read, I can definitely see this being a go-to reference for me without a doubt. Also found the foam stuff really interesting. I have a coworker who is into that stuff, so he was geeking out about it when I mentioned it.

What a great book. Loved the details, the photography and the stories. One of the best, if not the best bbq book I've read. Really seems directed towards us bbq comp cooks. Lots of other great recipes as well!!! Great job.

This evening, on the way home from work, I stopped by a small, local bookstore. I went straight to the cookbook section to see what new items they had in stock. Right there, front and center, Wicked Good Barbeque! Had I known they were going to stock it I wouldn't have ordered it from Amazon. I believe in supporting the local bookstores in my area. Julie

We've tried at least 12 different recipes so far - and they've all been winners.
Although duck pastrami has been a favorite - YUM!

I also tried the wicked pulled pork recipe, but wasn't all that happy with it. I really like the rub, and I like the bbq sauce recipe, but I was a little underwhelmed with the end result.

With that being said, there is every reason in the world that the end result was entirely my doing and nothing to do with the actual recipe. I was just hoping that I was going to be completely blown away.

We smoked up some pork this weekend using the bbq rub and sauces in the book. I added a little bourbon to the sauce for an extra layer of flavor.
Everyone gave it a :thumb:
I have been cooking from Andys book Fearless Chef also. Quite a few good recipes there.

Got my book last night. I read the first 50+ pages last night and flipped through the entire book. This book is an outrageous steal at its Amazon price and I look forward to trying recipes and learning my way through it.

I ordered this last week as a recommendation from some brethren, It is a great book. Made the wicked pulled pork this weekend, with a few changes, couldn't get some of the ingredients for the BBQ sauce, we mixed 70/30 blues hog , dreamland. Omg it was excellent!!

Going to hopefully cook the competition chicken this weekend as a test run. If this monsoon keeps up maybe it'll wait for another day. Im all for smoking year round but this is record level rain for this month and is bordering on flood levels in the last 48hrs.
