Hey folks...I'm new to the competitive bbq thing. First KCBS event will be Mar.2,3. Can anyone tell me if caja chinas are allowed for butts? I'm looking forward to this and can't wait to get my a** handed to me, lol.

allowed, yes. fueled by wood or charcoal.

recommended? maybe not. without the smoke gun, you'll have zero wood OR charcoal flavor.

but, have at it!

I have seen a few of the small ones in use.By some pretty good cooks mind you.

i did forget to mention i have the smoke pistol. i can't imagine using a caja china without it for large cuts. i also plan on doing the ribs, chicken on my new braunfels super longhorn deluxe. hope this works out.

The smoke gun is electric. You may want to get the official KCBS opinion on whether that is legal to use to apply the smoke, just to be sure. I have a friend who has one and turns out some good stuff. We've used his at comps just to cook our 'eating' food on Fridays.

I would love to do the comp in Pennsacola. My wife has lots of friends there (used to work for DFAS).
