I have been cooking for 50 years. my name is Dan Schooler and I have owned a lot of smokers, big & little.
I had a great smoker from Dave Klose that weighed 9000 lbs. and had four chrome wheels. When you fired that Big Boy up for Pork Butts you were on watch for 12 hours...made great"Q". I have a Klose back yard model and a home made pig roaster and a Tec Grill. Throw in a weber and a ceramic smoker and a couple of cheapo's andyou can Imagine how much my wife complains about cleaning up the pit area.
I bought a Southern Pride that has a rotissiere, wood burner and a convection all on wheels that will cook 60 pork butts at one sitting. 225 degrees for 12 hrs till bone pulls out of meat. All of this with digital controls and no watching. Gosh..ain't life wonderful. I'm a natural born experimenter and can cook wood fires on up. Never use charcoal briquites only lump mesquite. Dry or wetribs..their all good.
I love this site and hope to be here for a while.
