View Full Version : A different way to do a butt?

I have done buckboard bacon once and I currently have 2 butts in cure which will be ready to smoke on Wed.

When I bone my butt for the bacon, I go ahead and slice it almost in half so that I have a piece of meat that looks like a side of bacon, call it a fileted butt.

The first time I did my buckboard bacon this way, it came out great. So I am trying it again.

Then, I started thinking, which is always a dangerous thing. What if I fileted a butt and cooked it like a regular butt for pulled pork.

The advantages I see.

More surface area for the rub. More surface area for smoke. Should cook faster.

Disadvantages? Not sure if it will tenderize like a regular whole butt.

What do you think?

Why am I considering this? Well, sometimes you want pulled pork and you just dont have 10 to 12 hours to dedicate to the smoke. I would think this method would cut that time in half.

Another thought, would be filet the butt, apply rub, then roll back up and tie with twine to resemble a regular butt.

Thoughts?

I think I am going to try doing this weekend unless someone else has tried this and it failed miserably.

I've not done this in the pit, but have done so on a rotiserie (sp) in the kitchen broiler oven. Turned out realy nice. Rub flavoring all the way through.

jg, haven't tried it butt... If I was going to, and I may, I'd leave it filleted open, the rub will help butt there's no substitute for smoke and the smoke won't get in the interior of the butt if you tie it back up.
As for the tenderizing, if you'll go ahead and wrap at 160-170 like normal and take it to 195+ I think it'll be just as fall apart as you're used to.
Nice thing about butts is they're cheap enough to experiment with, let us know how whatever you try turns out.

Well isn't that what country style ribs are, just sliced up butt? They come out well. Have fun and let us know what happens.
