View Full Version : How to tell when sausages/hot links are done cooking?

Please don't flame me if this has been discussed too many times already but I couldn't find it in search. I always seem to over cook sausage. I'll be cooking hot links this Saturday, and I don't know how to tell by looking at them if thier done. When I cut em open, the smoke ring makes them look pink (uncooked) and I always try to make sure the pork is cooked enough, so it seems like I always end up drying them out. Can I just go by a certain time? I'll probably be cooking them at the same time as some ribs and pork butts at around 220 or so. Help!!

Will I compare them them to my Johnson if it is the big links otherwise go by Temp. BTW Good Question.

I've often wondered myself, the only suggestion I can give is to sacrifice one and put a probe through the end. When it is done, or a few degrees beyond done, assume that the others are. If you go probing each and every one for doneness, you'll let the juices escape. Nothing worse than a dry sausage link.

I go by sight - when it swells to the point that it it's secreting juices and a crispy outer skin that's ready to crack.

I ended up just jamming a probe into one of the hot links and judging them all by that one. Seems like a simple answer now that I've done it. They were all bang on. Thanks for all the advice.
