View Full Version : Fathers day cook plans
I'm thinking smoked salmon and grilled pizza with homemade whole wheat crusts. Some simple sides like fresh garden salads since the produce is now coming in. The armidillo eggs sounds good too. Still need to watch the carbs though; diabetes. Nothing to difficult and NOT planning to feed a crowd. After all, this is supposed to be my day to relax. Yeah, right! Well, I guess it could happen, theoretically.
So? What's yall's plans?
PS anyone remember the thread on making it a contest to see who could loose the most weight. I'm down about 100 pounds but I didn't enter figuring I would have an unfair advantage.

Dunno yet, although I've got a coupla cedar planks and a ten-pound brisket at home...
Saw pork shoulders at Wally World for 98 cents/pound today.
The possibilities are endless.

Going shopping today, I will be throwing items in the basket, and the wife will be puting them back. Normally it would be what ever she wants, but I am leaning heavy towards brisket or pulled pork sandwiches for Daddy's Day.

Brisket on saturday, with some sausage wraps (klobase and BBQ sauce wrapped in a flour tortilla) to munch on while it's smokin'.
Sunday breakfast... brisket, egg and cheese on toast.
Sunday lunch... chopped beef sammiches.

Mostly leftovers from Saturday I'm sure. As I've already posted in another thread, I'm doing 4 Boston Butts, 4 racks of ribs, 5 tri tip roasts, and a bunch of hot links for a party (my bday) on Saturday, so I'm sure we'll be eating some good leftovers by Sunday. It's the most I have ever tried to stuff in my BSKD at one time, I can't wait to see how it comes out!

You mean the day that my daughter has to leave at 11am, and wont return till 10PM and she is in all 3 shows. U mean the day that they wont allow her to leave in between numbers, even though in between each is a 4 hour wait.??? What the hell were they thinking. Cook plans are pretty much shot... can u tell im pissy about it?

i have the solution phil, trailer moab into the parking lot of her dance show. throw on some ribs and brisket. check on every now and then. you can have one major dance recital tailgate party. just an idea

Doing my cooking today. Just finishing 12 hour Brisket cook on a CAB and a Sam's Choice pair of flats. Testing.
Getting to love the "Cruise Control WSM" :wink:
Just check it every couple of hours and build deck with the spare time :lol:
For "Father's Day" weekend, wife is going to pick up GrandDaughter Sat and Sunday.
I get to split 4-5 cords of Pecan, Oak, Hickory, and Persimmon. "Loose 10 pounds" MOD in the Florida heat:twisted:
Anyway--Happy Father's Day to all you Fathers out there :lol:

The dance instructor must hate men. Sunday is suppose to be a beautiful day in the northeast too! I like the idea of the tailgate party.
Fathers day cook includes 2 yard birds, a 13# brisket, two 5 #'s butts, and 3 racks of spareribs. Also going to try some of those armadillo eggs.

I'm going to be doing two whole turkeys and 10# of chicken quarters.
Since my new smoker was an early fathers's day present, I thought it would good to use it that day.
Good thing I enjoy smoking otherwise I'd feel set up by the family.

Well picked up 2 slabs each beef ribs, and pork ribs. Wife says she is going to smoke them, which translates to I will smoke the ribs, but maybe she will do the rub.

Not much of a "day off" for me. I will be vending my Q at the 30th annual Arts in the Park festival all weekend long.
Next weekend though is my dads 65th Bday. We have a day of fishing planned with a nice dinner with all the family that night. That will be my fathers day -a week late.
No cooking here... I'm in the Land of Neil visiting the in-laws this weekend. LONG drive from KC! Neil, be sure to check your PMs if you are on later... I left you my cell #. I'd like to drop by the Ribfest you told me about last month!
The Rib Fest has been postponed for 1 week! I'll still be cooking up storm so stop by and enjoy a cool adult beverage while the aroma of sweet blue fills the air.
Bill, Greg, and Ron, it is only a short drive to St. Joseph, MI (2-2 1/2 hrs.). We are having a rib cook off next weekend. Winner gets the rib crown!!

it's 3:30, the butts are at 122...only 5 people online....
The brisket and butts will go on around noon today then I'll add the chickens and ribs tomorrow morning. The family will be here at 1:00 Sunday afternoon for the feast. The brisket has been soaking in the Dr. Pepper marinade since 5:00 last night.

Bill, Greg, and Ron, it is only a short drive to St. Joseph, MI (2-2 1/2 hrs.). We are having a rib cook off next weekend. Winner gets the rib crown!!
It would be a shame if the Rib Crown left the state! :D
We're considering a weekend trip to visit my parents in northern Indiana, so it would only be an hour from there to St. Jo... What are the hours on Saturday? I may sneak away...

I put a 7.5 lb flat in at 6:00 this morning. Its at 155 now. I'm going to take it to 180 and then pull it. We'll eat it with my parents tomorrow. I'm also going to make some slaw and beans to go with it.

I took out a 5# pork loin roast, whatever the fark that is. Looks like a cross between a shoulder and a bone in loin.
I think the butcher apprentice farked up and the head butcher said "just put the word Roast on it"

Update: I've got 30 lbs of butts foiled up (4 of 'em) cruising on up to 190 or so... 3 racks of ribs foiled up, mid way through a 3-2-1 session... just popped 5 tri-tips in, looking good... all that's left are the hot links...

$2.35# vacu-suck brisket flats, go a 5.5# for tomorrow, and a 6.5# for later
3# pack of Johnsonville Bratwurst was $7.50
$20 box of that Kirkland HD foil.
Thats all that was in the cart.
Couldnt find the 2# Jimmy Dean Fatty. South Beach crap was where it use to be in the fridge.
So I will cook:
5.5 # brisket flat
4 bone in chicken breasts
2-3 fatties
5# pork loin end roast (whatever that is)
and a couple bratwurst

I pulled my Father's Day Brisket a little while ago... It was at 180 internal. I'm going to chill it and slice it in the morning, and then reheat it in a casserole with a little beef broth and whatever drippings come from the brisket.

Due to little league games, graduations, etc. the judging is taking place at 9:00 pm. I'll be cooking a brisket and a couple of butts along with some other appetizers. As reigning rib king, I get to judge this year and am not one of the competitors. I'll be at the farm most the day so you can stop by any time for a cold one and some eats. If you think you can make it, pm me and I'll get you directions along with my phone #'s.
Just checked the brisket 143* and the butts were at 140* 9#'s of spare ribs going on at 6:00 am along with 10#'s of chicken and as many armadillo eggs I can make with 2#'s of sausage.

Well, I wanted to put up some pictures of the finished product but by the time it was done I was pretty hammered and couldn't find the camera, although I'm sure I wouldn't have been able to use it anyway. The butts got stuck at around 180 for seemed like forever, I don't really remember what they were at when I took them off, but I know they weren't finished. Everybody loved everything, and you know how it is, I was thinking to myself "this pork is way too tough, wrong texture" etc... It tasted good though. The ribs were awesome, so was the tri-tip. It's great when after you spend so much time and effort cooking that everybody raves about how good it is. Makes it all worth it. At least I was able to save a little for today. HAPPY FATHER'S DAY TO ALL THE DADS!!

Slept in, just got my smallish packer(8lbs) and 1/2 of a sirloing tip(about 4.5lbs) on about 10AM.
I had tried grilling 1/2 of that sirloin roast and it was way too tough. Hoping a little brisket technique will redeem it. It is on the shelf under the brisket which is fat down, so I am hoping the brisket does a good job of basting the sirloin.

Got 2 slabs of beef ribs on and 2 slabs of pork ribs. At the last minute I remembered the fatties got two of those. The smoker is full, but the smell is driving the neighbors up the walls. Using hickory wood this time. Went real light on the rub last night, looking forward to the results of this cook.
Can not wait to get my Father's day present so I will have a larger cooker. BTW in the case I wind up with a gas grill will it be difficult to smoker on it?

Finished eating and now ready for bed. Started this cook at 11 yesterday morning. Made it through the night on 2 h ours of sleep. Brisket, butt, ribs,chicken, armadillo eggs, grilled eggplant,baked beans, coleslaw, potato salad. All from scratch. Whew!!!!

Dino Turd and Pork roast are wrapped at 166.
Not gonna get to cooler the brisket, which sucks. I like it in the cooler for 2 hours.

Treated myself to watching Golf for Father's Day. US Open, my favorite! It's been all all day, kinda like a great Brisket Q Day! Next when it's over, I'm gonna go play Ball with the Dogs.

I sliced my chilled brisket this morning to take to my folks place. I also made up a pot of beans and a bowl of cole slaw. When we arrived at my parents place, the beans went into the ovenfor a couple of hours. After an hour had passed, I put the brisket slices into a covered dish with some beef broth and let that heat for the last hour. I heated up some sauce and served the brisket with sauce on the side, the beans and the slaw. The brisket was very moist and tender. My dad surprised me by eating the brisket without any sauce!

Well, the brisket is great. I am no longer a small packer hater. :) It could be just a little more tender, but it does pull apart with just a little tug.
As for the sirloing tip, it came off about 30 minutes ago, it was much thicker, so it took longer.
I took equal parts shack sauce, ketchup and brisket juice. Not bad. Cut down on the pepper taste.

Just sliced the sirloin roast. Came out good, not quite as tender as the brisket or as juicy, but still good. Similar to a flat I did once. It probably would have benefited from being foiled about another 2-3 hours.
At $2.00 a pound, it was a good price. I just need to figure out a better use other than hamburger.

The ribs came out great. Slow smoked, while watching TV and drinking beer. No chores on Father's Day.
