...pop the smokin' cherry this weekend... :D
I got the SnP put together last night, finished up at about 10:30. So, it was too late to do the pre-burn. I'm leaving work early today to do some stuff around the house and the pre-burn will be top priority.
My wife picked up about 6 pounds of 2 inch thick boneless pork chops and wants me to cook them. I also picked up a couple of 12 oz. packages of Jimmy Dean sausage. I'm looking forward to the weekend and have pretty much shut off the brain for today.
Thanks for the site and what I've been able to glean from its archives.

Seems like someone has plans for a GREAT weekend.
The weather is going to be hot and muggy - probably get some more rain, but what's that got to do with anything? :D
Two pork butts and some chicken thighs are on the menu for Saturday.

Just like prom night...disappointed about a dud of a date...
It started raining at about 2:30 this afternoon and hasn't let up. I am afraid to even try to do the pre-burn tonight. When it starts to let up and seems to stop, I get my stuff together to try and get outside. Then, it starts to rain, again. What a bummer.
I guess I'll just be behind a few hours or may wait until Sunday to cook and just do the pre-burn tomorrow. Sunday is supposed to be mid-80s and sunny.

Thanks, Bigdog...it's a bit far from the back deck/patio to the garage and uneven...a real pain in the arse, but I'll keep it in mind for next time.
Well, brothers...I'm an hour and a half into the pre-burn...coated in vegetable oil and steady humming at 300 degrees...I'm not sure if I'll actually get to cook this afternoon or if I'll wait til tomorrow
(Sidebar: my daughter and I are going to the Night of Thrills, assuming we can get tickets, at Raceway Park so she can get a taste of top fuel drag racing. If it doesn't scare her half to death (she's 5, going on 6), we may head there for the big event in a couple of weeks...)
I've employed all the tools in my arsenal so far and am loving it. I've had a Weber Smoky Joe Silver that I set my Weber Chimney on to get it started. I love the chimney and may never use lighter fluid, again...it was too easy to get the Kingsford charcoal started without it (thanks to HickoryNut for the offline recommendation on charcoal). When I actually start cooking, I've got some hickory chunks that I ordered with my smoker. I bought all my stuff from americasbestbbq.com based in KC.

Great day, but I didn't get to the chops today. I did get the two fatty's smoked, and they turned out wonderful. I set up two slices a piece on some leftover biscuits with a little butter. I am a happy man with my after race snack. Real man's day...smokin' and racin'...
My wife is loving my new found love for cooking this new craze of mine has caused. She's now added about 8 or 9 chicken breasts to the chops for tomorrow afternoon's agenda. I'm thinking of using a water tray next to the firebox opening for both the chops and chicken. Any other suggestions for me from the crew?

in the horizonals i always use a waterpan right next to the hot spot by the firebox. You can also put about an inch of water in the bottom of the cham ber. This assists in keeping temps even and also in temperatiure recovery after opening the chamber. The files section has a list of mods for horizontals including a baffle/tuning plate. Most important is, if its not in the original design, is to get the smokestack to grate level or lower. Use a sliced can to do that real easy.

Ummmm...you advised me to start with the fatties...of course, the only ones I could find in the grocery store near my house were 12oz. packages...not the industrial strength pounder+ like in the South.

Any chance to gig me about moving up to NJ from the Natural State will do for HN. He also doesn't know that the only people who say Joisy up here live in New York.

It's about the only way she would go with me. I did such a good job of warning her about the noise that it kind of back-fired on me. She had a blast for her first time going to one. I guess you take the girl out of the South, but you can't take the South out of the girl.

BS, I haven't even eaten meat in 5 weeks. Put on my swim trunks and looked in the mirror and said OMG. Fruit 'n veggies for over a month and 30lbs later them fatties in u're pic look like gold bars. As you know my boss Bob, this kinda behaviour can get you fired quick. The single most important question he asks during an interview is "do you like BBQ?" but its a risk I must take.
Not if, when I hit my goal of 50 lbs lost by 7/4 you can bet I'm gonna burn a rick of wood. Meanwhile, my charcoal is about ready for the roasted corn and veggie kabobs. She-it, sprinkle on a little Southern Flavor and make a dang turnip taste good.

Good luck on the diet...Bob's probably steamed about losing one more Walker's all-you-can-eat rib buddy...
I took advantage of being able to grill in the firebox today while the chops and chicken finished up and roasted some potatoes, onions and peppers to go with the meat.
My final pic of the weekend is with this...of the chops and chicken...you'll noticed the badly hidden BBQ god burnt offerings...learned something today about the SnP. The two burnt chops were closest to the firebox and bascially got grilled for 3 hours instead of smoked. I'm going to have to look into that baffle mod. Everything else turned out good... I'm looking forward to getting everything right.
Ponygirl smiled ear to ear when I told her what you said...she misses Baby and keeps asking for a horse/pony about every other day.
