Dave Klose stated "You can use some woods green for cooking, but under no circumstances should you ever use green mesquite for smoking." When and what kind of green wood could be used?

He also recommends splitting 6 month - 2 year old logs 3 days before using. Would 6 month old larger logs be ready to use?

Pecan is amazing when used green, but good luck keeping it lit if you use ONLY pecan. It burns cool when cured, so has to be mixed with another hotter wood if you used green pecan. UNLESS you have a Klose smoker with a well insulated firebox that makes things just burst into flame when put in.

I can PERSONALLY vouch for the wisdom in not using green mesquite. Living in texas, I use a whole lot of mesquite. Green mesquite smoke will make you want to sandblast the inside of your smoker.
