I have a client who wants to add a 2nd meat option to an event I will be doing. They have requested Va Sugar cured Ham with a carving station.
I have checked and my cost on the hams whole boneless uncooked would be $3.18 per lb. Taking in to account labor for a carving station, what would you charge per person for this?

With a 1/3 lb serving your cost is $1.06 per serving assuming your just heating and serving. At 3 X cost Id go $3.00 extra per person.

I'd add the $.18 to the $3, but that just me.....:-P

That is mainly why I posted, I was thinking $5 per person

$2 pp for carving seems a lil steep. How bout a flat rate added to your pp charge?

I would charge an hourly rate (3 hour min.)for the carving station plus $3.00 p/p for the ham.
