Here is how Redhot requested this Throwdown...
For the next TD, I'd like to call In a Shell...but you must be able to eat the shell :becky:

So, whatever you cook, it must be in a shell, and the shell must be edible. It does not have to be seafood, so don't box yourself in. Just make sure what you cook is "In a Shell".

Any questions, fire away.:thumb: I'll be happy to not answer them.:laugh:

You may submit entries that are cooked from Friday 9/16 through Sunday 9/25.

Entry pictures must be submitted by Midnight Central US Time on Sunday night 9/25.

By submitting entry photos to this Throwdown thread you are agreeing that you have read and understand the Throwdown Rules (http://www.bbq-brethren.com/forum/showthread.php?t=82799).

The voting will begin Monday 9/26 after I submit the "Vote" thread and will run through Saturday 10/1. All votes will be public.

Don't forget, you can still enter the Mini Throwdown (http://www.bbq-brethren.com/forum/showthread.php?t=115477) until Sunday night 9/18 by midnight Central time.

Made me think of a contest when at the team meeting a question was brought up about a turn in for "anything but".

Team - "the rule says everything in box must be edible - what about the rind on a pineapple........will that get us DQed?"

Contest Rep - "Can I eat the rind of a pineapple?"

Team - "go ahead if you want to, I don't mind."

Then I would think a Chicago Style pizza would fit the bill nicely. I've been waiting a LONG time hoping there would be a pizza throwdown at some point...this may be my chance. Then again, crispy tacos would also qualify, I would think....

I would think a Stromboli or calzone would be more in keeping with a shell theme.

Well, it would be crunchy, so that would qualify, but that is because of the bones, so it wouldn't get any votes, ... unless it had a warning label. Oh this is much too confusing. Maybe Redhot can just give us each a cooking assignment. That would be much easier. :thumb:

You mean the shells have to be boneless? Is that a requirement? I'm getting confused.

I think y'all are confusing yourselves...Guerry was right, pasta shells, pastry shells, candy shells, taco shells and yeah, soft shell crabs will work too, as long as the dish is in a shell and the shell is edible. I'm sure there are more types of shells (although I don't think a Chicago style pizza crust would be considered a shell because it's flat) than what I mentioned so put your thinking caps on and get creative! Geesh, maybe I should have stuck with my first idea for the next TD and gone with dairy!:doh:

It is awfully confusing though to call something like "in a shell" and actually require the dish to be NOT in a shell, since a real shell is not edible. This is exactly the opposite of calling "Eggs" and NOT allowing someone to submit eggplant. :mad2:

I believe the rules are meant to be indifferent in regards to turtles. Besides, don't they have more of a carapace than a shell?

I guess I will break the ice with what I can only hope is the worst entry in this TD. I give you my NUTS and a SPAMOINK ball in a Shell. :bow:

I ordered a Weber Smokey Joe Gold but I wasn't sure that it would be here in time to cook on for the Mini Throwdown that ends today. Mostly I believe my logic was sound as I only ordered it yesterday :noidea:. Thus, I was in search of something to cook on and what to cook. Due to an upcoming hunting trip I feared that this could be my last chance to enter and win (read: triple goose egg) three Throwdowns with the same entry.

Yesterday in a state of boredom I swung buy the local Goodwill store for ideas. There I saw what surely would be the answer to my needs:

Don't lie, you know you want one too. But alas, it did not qualify for the Mini TD due to the size of its grilling area. Or perhaps just the general lack of a grilling area would have been an issue. Since we all know how much Gore likes his dilly bars I did not want to steal one of his special treats.

So, I continued on through the store to see what else I could find. There, on the shelf, I saw it. I found my NUTS on a shelf of the Goodwill store. My Not-so Ugly Tumbler Smoker:

I kept the build simple since it is Sunday and laziness is a requirement. Since the shape is tapered all I had to do was cut some expanded metal into circles for the charcoal and cooking grates.

After the test run I lit another briq of charcoal and let it come up to temp while I prepped the feast. Ingredients included a meatball, thinly sliced SPAM, a strip of bacon, and a tortilla to be used later.

Once the bacon was nice and crispy I pulled the hunk of meat off my NUTS and finalized the preparations. I glazed the ball in some Blues Hog Smokey Mountain and then wrapped it in its shell.

Well, this is a throwdown I will not soon forget.

First off, I had several creative ideas, but none of them worked out to be plausible. So, I decided to do stuffed peppers, with the peppers being the "shell." Yeah, it was a mediocre idea, but it was the best I could muster.

So, I set up the mini-WSM, and made up my normal meatloaf mix of half ground beef and half ground pork, with a couple of eggs and some bread crumbs. I used a mexican mix of herbs and spices. I loaded up a couple orange bell peppers (sweeter and healthier), and topped the loaded peppers with Mexican Cheese.

So far, so good.

I got up to 135 on the probe, on the way to my 160 degree done temp, and a farking rainstorm hit. Yes, in the middle of the worst farking drought in Texas history, a rainstorm hit.

I tried to move my mini-WSM into the garage, and as I tried to set it on the floor, the farking thing went over. Grease, lit charcoal and food flew across the floor. FARK!

Well, the stuffed peppers managed to land upright in their foil container, so all was not lost. But, I needed to get the food up before psycho poodle got to it, and hurt himself while simultaneously ruining my food.

I yelled at the dog, and ran into the house to get something to put the food in.

At this point, you need to know that I have been having problems with the doorknob on my back door, lately. Oh, yes, I slammed the door behind me in my haste to save my food, and the farking doorknob froze up. I couldn't get out of the house.

So, I hit the button for my wrought-iron driveway gate, and ran for the front door. The farking gate button stuck, so the farking gate was going open-shut-open-shut-open-shut.... but only by about a foot at a farking time. Psycho poodle is freaking out, and I'm afraid he will get crushed by the gate, so I push against it and the safety thingy works and the gate stops.

By this time, I am seriously pissed off.

I manage to save my food, but psycho poodle sees my neighbor walking her mean-ass POS dog, and runs out the gate to say hello. The neighbor's dog bites psycho poodle, and psycho poodle proceeds to kick my neighbor's dogs arse.

I have both hands full of food, and the back door is still stuck. I kicked the back door in, put the food on the kitchen counter, and ran out the front door to keep my dog from killing a stupid, useless, drop kick, inbred, fu-fu furball.

After the dust settled, I had not quite done food, a freaked out dog, a door with no dorknob, and a broken doorknob on my living room floor, AND duct tape covering the hole where my doorknob used to be.

So, this throwdown was not only challenging, but it cost me money, and quite possibly the friendship of a neighbor. However, she owes me big time. So, it may be a wash.

It as been a few hours, and a few vodkas, so I am feeling better, and by tomorrow, this will be funny.

Oh, on topic -- I will not have a "shell" throwdown entry.

The pan with the peppers ended on the floor, upright. The meatloaf I was also cooking ended up inside the SJ Lid, so I was able to save most of that, too.

Almost a "Suckling Pig"

Have you always wanted to make a suckling pig on the BBQ, but figured it was too much meat?

Well here is my solution for that ..

Get a big piece of fresh Pork belly with the skin on it rub it with some pepper and salt to taste and
marinate that for 2 days in the fridge in a 50/50 mix of Sweet soy sauce (Ketjap Manis) and red wine,
1 sachet of Nasi Spices (from your Chinese/oriental store)
with a shot of Gin added to it.

Take a piece of Porkloin or Pork Tenderloin and butterfly it and marinate that in a mix of
4 Tblsp of Rice wine vinegar and
1 Tblsp of Mirin and
some very finely chopped lemongrass or lemongrass powder.

Take ~ 1/2 to 1 lbs. of FRESH breakfast sausage and mix with:
~1/2 cup of spicy breadcrumbs,
some finely chopped Cilantro,
~1/2 Tblsp brown sugar,
1 Tblsp majoran,
3 chopped up cloves garlic,
1 small onion, chopped and sauteed
pepper and salt to taste
some Almond slivers
2 small jalapenos seeds removed and chopped - or Sambal Oelek (red pepper paste) to taste.

2-3 green onions
couple of strips from a red bell pepper.

Take the Pork belly out of the marinade and place on a working table
Place the Sausage mix in a roll length wise -IN THE CENTER- on the pork belly,
Place the green onions and red pepper strip on both sides next to the sausage.
Place the butterflied porkloin on top of the sausage to cover it completely.
now roll up the pork belly (the porkloin should hide/cover the sausage inside)
and tie the roll with butcher strings.

Rub some pepper and salt on the roll and then Grill on the BBQ
(straight on the grill or in a roasting pan)
until the temp in the center is ~ 150 F -
move the roll every once in a while to get every side and the skin nice and crispy..

Let it sit for 10 minutes under some Alufoil to settle..

Yeah, that occurred to me. But, if I teach him to open the door, I have to teach him to close the door. He'd be naturally motivated to open it, but not likely to give a chit about closing it.

My last dog, Casey, figured out how to open a door all by herself. Psycho poodle isn't that smart. I could probably teach him, but I don't think he would figure it out himself.

Casey should have been named Houdini. That dog could get out of darn near any enclosed area, and usually leave no clue how she did it.

I actually wrote a recipe for this one...trial run was really good but changes were made and this was, how do I put it? YUM! So, the recipe...

Savory Scallop and Crab Pot Pie

¼ cup fresh parsley minced
4 stalks celery sliced
5 large green onions sliced
1 pkg. baby portabellas, sliced thick
1 bunch asparagus cut in 1” pieces
2 T EVOO
4 T butter
4 T flour (or more if needed)
32 oz carton chicken broth (simmered with bay leaves, fresh thyme, minced garlic and black pepper)
2 cups heavy cream
½ cup dry sherry
Salt/white pepper/cayenne pepper to taste
1 pkg. sea scallops (thawed)
1 can lump crab meat
2 deep dish pie crusts


Heat EVOO and 2T butter on medium/high heat in large skillet; add celery, onion, mushrooms and asparagus and sauté until tender/crisp, add parsley, stir and remove from heat. Melt 4T butter in large sauce pan over medium/high heat, add flour to make roux. Slowly add sherry, chicken broth and heavy cream, stirring constantly for several minutes. Add salt/pepper/cayenne. If mixture is too thin, add a little more flour. If too thick, add more broth or heavy cream. Add veggies, stir and turn heat to low. Coat scallops in melted butter. Grill over direct heat until almost done (crab meat was smoked indirectly with a maple dust foil bomb). Cut scallops into bite sized pieces. Add scallops and crab meat to filling, stir. Prepare crusts by cooking until mostly done (prick with fork if crust puffs up), remove from oven and add filling. Cover with second crust, brush egg wash on top and bake until top crust is golden brown.

Biggie will have to rule on whether she can use the photo, but I also touch up photos for other dishes, from time-to-time, if possible. There have been some pictures I tried to fix that were just too messed up to help -- like a certain out of focus pork chop picture. :becky:

Redhot, the other shots are pretty dark. Not much shadow detail to work with. I'll see if I can help them.

I think the one with the shell is very well composed, and shows the food just fine. Even if I can fix it, I don't think the shot you like is as good.

Should have done a better job documenting the ingredients, but what you see here is shrimp and salmon broken down, mixed with fresh spinach, fresh parsley, fresh garden tomatos, fresh garlic, ricotta, parmesan, mozzarella, cream cheese, and egg stuffed into jumbo pasta shells:

We drizzled more of the four cheese garlic sauce on top of the shells and broccoli, but I didn't want to ruin the picture with too much sauce. My daughter thought it was so good my wife overheard her telling one of her friends it was so good it tasted like something you'd get in a fancy restaurant... :roll:
Not sure about that but we all enjoyed it and will have it again.

We kinda did this earlier, but I am going to throw it up here since I totally lost the time to do a cook this weekend. I had some plans, some of the ingredients, etc but work reared its ugly head, then the rains came.

This is sirloin tip. You will see that the green onions, lettuce, tomatoes, red Chinese Giant peppers, etc have all come from our garden. The veggies stayed on the grill just long enough to grab some color. KFB was the main fuel, but I used some lump charcoal as well.

The beef was marinated with what was mostly citrus products: orange juice, a squeeze of lime, a few chunks of pineapple. Not happy with just citrus, I added some salt, cracked black pepper, and some dried onion.
IIRC the steak marinated for about 4 hours.

I started the meat with a sear and then ran about 10 minutes or so per side of indirect heat. The meat came out pink and had a citrus tang to it but it seemed a bit dry to me. I perhaps should have used some salsa on the tacos but since I don't generally go for that I never thought about it.

I'd certainly make this meal again but I'd approach the meat differently to keep a bit more moisture in the meat.

BTW, fantastic Moose. I can honestly say that I don't think I have ever had beef wellington but fark if that doesn't look great.
