I am cooking this weekend under the MBN sanctioning body in Charlotte, NC. Looking forward to the experience, I am only cooking ribs, but, I will give it my best shot against the others.....pics to follow

Best of luck!!! Practice your on-site speil, and remember cleanliness. On-site throws a whole different wrench in the works... I love it, but it's also a big pain. Hope you make finals, and then make sure you have a good 2 racks (for the 4 finals judges) ready to go.

I disagree! When judging ribs at either KCBS or MBN I look for ribs that aren't overcooked. Same bite.
