So my new team has our first practice cook this weekend on our new pit (bought it used and in great shape, already seasoned). It is an offset and not a POS like our old one. We are doing 2 briskets, 3 spares, 3 chickens, fajitas, pintos, and chili. Hope to post some good pron after we are done but any advice for cooking on a larger pit with a larger firebox is much appreciated
