Man, there is sooooo much good Que in the Texas Hill Country. I hope you got to spend enough time down there to experience a few of them.

Mecca for us Brethren. Glad to see you made it Thom. I've always wondered about being in that place and the feel and smell of the place. I would love to see and watch how those pits are set up. Watch the Pit Master and all.

One thing I notice is that in most cases when folks post their pilgrimage pics, the hallowed places in that area never looked packed with people. Must just be a small town.

I agree. While I was there on a Tuesday, the places seemed more or less deserted. The people at Smitty's did tell me that they fire up all of their pits on the weekend, which would more than double their cooking capacity. It was already hot as the devil's parlor in there, so I can't imagine what it would be like.
