cmon folks!ony 16 out of 40 teams are in for potluck.. ? Last year we had an awesome spread like never seen before.... I was hoping the dinner would have enough entries to invite some of the volunteers that are catering to the teams all day to join in for dinner. If you can join in, it would be great to feed the folks helping at the event collecting trash and running around.

ok ladies.., seriously.. i worked with newsday a lot the past few weeks.. and they really went above and beyond what I expected to promote our event.. it was also published in some sister publications besides just Newsday.

Now, I KNOW :caked: you would all like to make fun of my skinny columns and arm toupee's:heh:, but if the chat turns into a circus act from us messing around, they wont help us like this again and that would be a bad thing.. :drama: so please, i know it will be difficult and many of you will be busting a gut, but TRY to restrain yourselves for one hour and stay AWAY FROM THE KEYBOARD..... go vist a porn site or something. :thumb:

I can't wait to check out this contest, its my first and I am really sykt for it. My main reason for going is tasting comp BBQ and checking out gear and the folks. Are the teams competing going to let spectators taste or can i only get food from vendors, and if so are the vendors as good as the Comp BBQ or are they one and the same? Just don't know how these things play out. Also can i walk right up to the comp teams and check out what they are doing. My fear is not being able to get close to the competition folk/BBQ and ending up smelling their smoke and eating a county fair pulled pork sandwitch instead.

The Board of Health does not allow team to give samples to the public.
However, R.U.B. BBQ will be there as an excellent vendor selling bbq to the public.
As far as the teams, we're all very friendly and if you come up and introduce yourself, we'll let you come in and talk to you about our smokers and bbq competitions (as long as it is not near turn in time on Sat and Sun.

Ok guy please don't think the Brethren would turn you away. Its just that some seem to forget that your site is your own party and friends are allowed to come, check things out, meet some great people in the brethren and enjoy what BBQ is....not just a food but an experience. So please stop by Swamp Pit BBQ, check out our stuff sit down have a beer, be a taster on sunday for our comp food and then visit one of the awesome vendors, or as New Holland likes to call then VENDERS, to get more then a taste of whatever peaked your interest at our site. If it weren't for Brethren member who remembered it was a party I wouldn't be here today. Just remember that between 11-1:35 on sunday you are to be like a 1930's child....seen but not heard or under foot. The same goes for Smokers Lounge BBQ, stop on by and say hi. Everyone in the Brethren was so friendly and welcoming when we started out that we have no problem paying that same courtesy forward to future competitors.

ATTENTION ALL BRETHREN ATTENDING

Our fuel donation went poof so we will need to fill our generators with gas cans. Not a biggie but we would like to ask anyone coming to bring a gas can. Please mark it in some way to identify it as yours. Petro dissolves markers. Think of that when marking you can.


We would also like to ask, without any obligation or expectation, if you would donate some diesel or gasoline for the generator. Of course just having the cans to make the fuel runs will be great.

James is absolutely positively 100% correct in this. However your membership here entitles you to some privileges; heck you need something for all the headaches it creates. :-D One of those privileges is that you are no longer John Q. Public at a Brethren event.....you are a brother or sister. As such we take care of our own. We encourage anyone's wish to learn the skill set needed to become a pitmaster or competition cook.

We as cooks tend to use the "Board of Health" line on the people walking around with a plate and fork, picking their teeth with a toothpick and asking if you have any samples. After a while you can spot the people who are truly interested or the ones who are just looking for something free.
I love the 20's something couple. You know the two not so "Kids" anymore. They just got a ground floor apartment and he thinks he knows how to cook. He is peaking around corners trying to see when the pit opens. His eyes wide and wondering what all this equipment is. Suddenly his weber kettle looks like a Yugo. She is on his arm trying to pull him away, punching him in metronomic fashion each time a hand pulls free from his hand. Him giving her that ridiculous stern face we all thought did something when we were in our twenties. Then when you say "hey you want to see whats in the cooker?" he pops up like a gopher and and shakes his head like Mutley did when Dastardly offered him a medal, and comes running into the site. She pouts and strikes a pose, the "I'm pissed" look and turns he head 90 degrees; as if to look at something more obedient. Even better is when you invite her....again.... into you site and she obliges you like you've met her requirements of arse kissing. By the time you are done she wants to hang out more then he does. Then he starts hanging on her arm. lol

Its really a fun experience.

ATTENTION ALL BRETHREN ATTENDING

Our fuel donation went poof so we will need to fill our generators with gas cans. Not a biggie but we would like to ask anyone coming to bring a gas can. Please mark it in some way to identify it as yours. Petro dissolves markers. Think of that when marking you can.


We would also like to ask, without any obligation or expectation, if you would donate some diesel or gasoline for the generator. Of course just having the cans to make the fuel runs will be great.

Thanks for the concern Bull. The venue has a gas generator that we are allowed to use and a donated diesel generator. So we can utilize both unit so both fuels are great. We are also fortunate that the diesel generator came fuel. :-D

I can't wait to check out this contest, its my first and I am really sykt for it. My main reason for going is tasting comp BBQ and checking out gear and the folks. Are the teams competing going to let spectators taste or can i only get food from vendors, and if so are the vendors as good as the Comp BBQ or are they one and the same? Just don't know how these things play out. Also can i walk right up to the comp teams and check out what they are doing. My fear is not being able to get close to the competition folk/BBQ and ending up smelling their smoke and eating a county fair pulled pork sandwitch instead.

The BBQ for sale will be comp quality Que. The teams welcome all visitors...as long as you are friendly, non-intrusive (prepping boxes) and respectful you will be welcomed into most team sites.

Not a biggie. I will be making plenty of donations (16oz at a time) and will have all of our guests do the same so it's not about the dough.

Newsday only mentioned the $3 this week.

Any time you give the public something to complain about relating to a contest, it's no good. Family/group of 7 above 10 y/o owes $21. Not a biggie but some people will bristle if it was not disclosed from the beginning.

I am always looking to reduce negatives by addressing them ahead of time.

I doubt things are going to be that locked down. If you feel like your proposed admission fee would do better for others than it does in your wallet, give it up. If you want to hang out for free, do it. I would always recommend the first but I also wouldn't force friends to pay to hang out.

I am with you but as for planning, better to have it from the beginning.

Heck, none of my guests would bristle at $3 but I know some people would.

Like in the restaurant biz, one bad review gets read by many. A good one, by a few.

oh good, a volunteer! can you get to the venue tomorrow, before 9, for the porta potties to be delivered, the ice machine at 11, Water and soda around noon, and install the snow fencing so folks dont jump the rail and post fence to skirt the 3 bucks.... oh, and the tables and chairs are coming 'sometime' too... Then run to depot for hoses and circuit breakers, then RD for briskets and butts, 1000 hamburger buns, table clothes, coffee cups and OJ.. and on the way back hit costco for a cooler and some fancy plastic tableware for the VIP tent, and 5 bags of kingsford for the cajachina.... then get back to the venue for team sign ins and finish the electric and water needed for the teams that signed up late.

My real concern for this weekend is whether there is going to be a shave ice vendor like we had at holtsville? I consumed more shave ice in one weekend than a normal person consumes in a lifetime.

POOBAH! We'll be onsite sometime after 5pm, if you need a hand with anything we plan on being there most of tonight! And as far as any new comer's go, all are welcome at early mornin' smokin's tent. Come and help taste test our food, stop by early sunday morning and see how we build up our boxes, but please as many have said, you can come and watch between 10-1:30, but please don't ask too many questions or get under our feet. This is crunch time and we all have a lot of time and hard earned money in this. But this is my home town event, i'll have lots of family and friends there all supporting make a wish and this event.

Sorry - I wasn't trying to be critical at all. I thought I was pointing out something that was a minor issue that might have to be dealt with. Obviously, it's not.

The "we" was meant as the collective "we"...as in the Brethren, the competitors, the people helping to spread the word, etc. I would have been glad to assist in any way possible.

I really didn't mean to unleash such a crapstorm. I am so exicted, happy and thankful that this event is happening. I appreciate all that Phil and the others have done to make this awesome event continue this year.

I'm trying to get excited but I'm stuck at work. I was supposed to be out of here at 3, but due to unforeseen circumstances I'm stuck here until at least 4, maybe even 5. I'm pissed now but once I get out there, set up and have beer in hand I'll feel a whole lot better.

The tracks are about 20 yards from the site, but I think the closest actual station might be Speonk or Riverhead, which is not that close.

The Maples should have its own station...

contest went quite smoothly.... good attendance.

I had a great time with a couple of total newbs working with me in Phils trailer. Many thanks to all the cooks that directed people to the black trailer with the pig. Man some of those people are real a-holes!! Phenomenal job by poobah, but also Sharon and Jackie and Mike and Ryan and especially James...Man that kid has matured on so many levels since I first met him! That family pulled together to support Phil and it was impressive as hell to watch. yeah, a couple of glitches but otherwise I really learned a lot doing this solo for the first time. Always be sure the hopper has pellets...twice I was a farking moron and ran out pellets. That's phils Job!!!! :) missed not cooking with him. Had great flavors I felt, and walked in chicken at a 6th place. I was thrilled.

Congrats IQue - now you can rest, Swamp Pit, glad you're not coming to ribfest ;) And all the others that walked and participated. See you at rib fest soon! Scott
