That's more true than you know Guerry... As we were putting the finishing touches on the box she spotted a very small piece of foil on one of the slices! It wasn't more than 1/8th in long and barely visible, but imagine if a judge had found it and we were DQ'd instead!

Ron does the cooking, but the box doesn't leave the trailer until I say it is ready :-D We've missed a 180 by an appearance point a couple of times before, so I make sure that our turn-ins look as good as possible with what the cook give me :-P

Wow! OK - here's an excellent example of . . . 'your slices are too thick' . . . 'you've got too much in the box' . . . yada yada yada . . .

But when I saw that, my first reaction was actually "Wow! That looks GREAT!". And that's what you want.

No wonder you got all nines -

lol...btw.... You guys never heard of the Texas cut? That was MY BOX, back in 2004 at my very first contest. It was an awagyu brisket and took third or fifth place. I almost spit my soda out when i saw it in this thread and took a double take.. nicely done sneak attack there ronelle. figured i'd let it ride until someone says WTF? What was even stranger, i cooked it on top of sliced vidalias thinking they would 'protect' the brisket from the heat..a nd instead the onion steamed and permeated al the way thru the meat.. I think the judges were so confused they rated it like it was a white castle hamburger. That funky tuft of parsley was hiding a big hole in the brisket where the point shrunk over the flat.
