Just wanted to say hi. I live in the Rocky Mountains in Colorado at about 9000ft, and am just beginning my smoking hobby. I make my own beer and wine, so thought some smoked cheese and meat would go nicely with it :)

Guessing will have a slight learning curve with the altitude as well. Heard great things about this forum so glad to be a part of it.

Just got a 4 door commercial freezer from a grocery store that had burned down and am converting it to be my first smoker. Any ideas or suggestion is greatly appreciated. Planning to use a double propane burner in the bottom with a steel plate over the flame and place my smoking wood on top of the plate. Shouldn't be enough oxygen left to flame so expect it to smolder whole logs nicely.
