How common is it? Seems like it would be a fun category to compete in, but I don't think that any of the contests in my neck of the woods include it.

I judge one cook off a yr, that has sausage as a category, and it also counts toward GC...The sausage is provided with entry and is nothing more than pure ground pork, no seasonings at all have been added, the cook has the ability to do anything with it he chooses, but has to be turned in in slices and in a casing.,:becky:

New Holland PA in August has a sausage category; it is ancillary only and does not count towards overall GC. The turn is is Saturday morning 11:30 just before chicken at 12:00.

We are forever suggesting to contest organizers around here that they do a sausage category, but it's just not popular with the cooks. A lot of the local cookers prefer to do seafood or jambalaya instead, be it for the contest or just for their guests.

You have to be careful if you want to use store bought sausage. IRRC Poobah had to disqualify himself one year at New Paltz for using store bought sausage because it was precooked. I was very impressed with his honesty because he could have gotten away with it but chose to disqualify himself. That commands a lot of respect in my book.

I would love to see sausage as a Fri night ancillary.

Any sausage in any form with any other items in the box goes.
9" styro box.
Sausage must be "The Star" of the entry.

I would take a shot at that. :-D

we do 2 to 3 events a year that have a sausage category
