Now I normally wouldn't post pics of my stuff especially when it's done good but I wanted to see what you guys think about it..there is no au jus on the meat I sliced it and put it straight in the box.it was juicy enough on it's own..I'll give you the scores and placing later

9 9 9 and I don't care that the parsley could have been placed a lil better around the edge - all NINES. I can just taste it.

My thought would be a strong 8, but probably a 9...just want to see it shine/pop a little more, green a bit distracting...blah blah. I know each entry is individual merit, but sometimes there is something that looks and tastes so good that it doesn't matter what follows it...its gonna get rocked (human beings).

My initial thought was a 9, I'm about to taste great brisket so lets see if it can live up to its looks. If it does...big score time...if it doesn't????

9 in apperance, but I am going to guess that it is undercooked from the looks of the slices and burnt ends. That is just my thoughts. I could be wrong.

I think that box looks great.9! the only thing I could say is that the slices look thick, but that may just be the pic.
nice!

Ok guys let me just say this..I've seen a lot of brisket pics posted lately and a lot of different opinions have been stated..there is such a fine line between overdone and perfect tenderness those of you that have cooked many briskets can attest to this fact..when i hit it with the probe i knew it was money, but when i cut the first slice I laughed out loud..Vince I know you've mentioned that feeling before.I had that same feeling that day!..anyway guys thanks for the feed back..here were our results
899
889
888
899
866(WTH)
989
first place was 174
we were 2nd with a 169.7 out of 65 teams

thanks again for looking!

8's on appearance? Seriously? Great work on the brisket!

I guess my biggest surprise is only 1 9 for appearance? As I said, I think it looks great. But everyone sees something different.

One of the best brisket boxes I have seen on the net. This is clearly a 9, I love that the top line of each slice is aligned perfectly with the other slices.

No clue how you got so many 8's on appearance. That chit is a top notch brisket box!!!

Nice presentation!
This past weekend I turned in brisket definitely not as nice, but still got consistent 8's for appearance (no 9's though).
Could the reason you didn't get more 9's being the burnt ends "throwing the look off"? I know they are nice add-ons/treats for the judges, but everytime I plan on adding them, they're never perfectly square, never perfectly "burnt", and throw off the whole look, so I always end up keeping them out (along with the agreement of my team).

You also have to wonder.... by the time the meat gets to the judges and they open it up, is the moistness/glaze still there.
The picture you show - I would have given it a 9 on appearance.

Some of you vets might say why would he post a pic of a box that did well..maybe a rookie move on my part but it's kind of a pay it forward type of thing for me..it's just over a year that I've been here on this site and without all of you we would not be where we are today..without a doubt, positively 100% for sure!..thanks all of the brethren and I hope this will also help someone along the way..sorry for being sappy but it's really true!

Well done Matt, and that would've had my 9 in appearance. Nice lookin' Q; probably undercooked but that's for another portion of the score. Very appetizing to look at, and it definitely say's "come take a bite". Like said earlier, I'm only surprised that you got mostly 8's.

Either strong 8 or even 9. Not sure about the football shaped slices, but other than that great looking box. The meat looks great.

That looked odd to me to. Not sure why but that was the first thing I saw. Otherwise, looks fantastic!

That's the best Brisket box EVER! Man, parsley this or that, it's about the meat! Appearance can't be better from the pic. Flavor and tender we can't do from here!

@ least an 8. Looks really nice. There are a couple of things that looked off to me. The front piece had some sort of sauce, glaze, whatever, and the rest didnt appear to. Plus the front piece looked like a big set of lips on first sight. Other than that, 9. :)

I don't like to say anything bad about judges but the table who judged your entry that day must have taken some sort of drugs. Your box is a nine all the way.

Far from underdone!...the first slice I cut was double thick and it still passed the pull test

Seriously...not sure how you didn't score better for appearance. Granted, the pieces do look a little humped...but who wouldn't want to take a piece from that box... and yes, I'm salivating as I'm typing this... Good Job, no matter what the judges think.

9

The only reason why I think judges may have given you an 8, is because of the parsley job, or maybe the actual shape of the slices. But briskets being the way they are, you have no control of that. I would eat that whole box in one sitting with a couple of budwiesers !

The brisket looks great. I know garnish is NEVER factored into appearance by Certified KCBS judges because they all were trained to NEVER judge garnish since they are judging "THE APPEARANCE OF THE MEAT" but i would suggest to build up the parsley bed a little to have the meat sitting a little higher in the box.
As far as the WTH judges how about this one from my last comp on brisket:
988
988
988
776 WTH?
988

I can understand a brisket looking overdone because the edges are crumbling and it looks dry but how does a brisket look underdone?
