Bought a 8 lb picnic last Sunday for the freezer, and then forgot to put it in the freezer, so I decided to cook it. I rubbed it with some Rib Rub that I bought at Bandana Barbeque in St. Louis last week. I put it n the Cookshack at 10:00 last night. Cooked it at 225* until the internal temp was 195*. It took 16 hours. Looked great, tasted better! Nice bark with a slightly sweet flavor. Here's some pics...

Just finished pulling a 8# picnic that looked just like the above pics. Sorry, but my only camera is a Minolta SRL circa 1980. Takes great pics but no instant gratification like most of you are used to in the digital age. Put the picnic in the 'dera this morning at 6 am along with a 12# brisket, 8#'s of beef short ribs, couple pounds of polish sausage and a fatty. Had the sausage and fatty for lunch, the beef ribs for dinner and just finished pullilng the picnic. The brisket is still wrapped in foil and in a towel. It is now in the fridge and I won't know how it turned out until tomorrow, too full to even worry about it. Everything else was Q Nirvana.
What a great day ; beautiful weather, beautiful wife, delicious Q, and Notre Dame's new head football coach just earned his fourth super bowl ring to show off to incomming recruits!! Now if only Norm Chow takes that job with the Tennessee Titans. Can't wait for nest September to roll around. Go Irish!
