Holy sh#t! That was pretty damned successful! The brisket was pretty darned good according to the ten people here, some even said VERY good. But the absolute BEST was the babybacks! OMG! I even impressed myself! When I uncoolered them, took off the foil and put then on the gas grill to crisp them up and add a touch of sauce... the things fell the fark apart! Each slab was in 2 or 3 pieces! It literally melted off the bones! And tender... geez! The brined, smoked whole chicken was a bit dry, mainly because I got to working with my daughter's birthday celebration and left in on the grill to warm up a bit too long! Otherwise, it was good. The brisket was SLIGHTLY too dry. I know I can do better but everyone was impressed regardless! The fatties were a bit overdone. I should have taken them off earlier and rolled them on the grate from time to time. I got up this AM and mixed up my beans and fired up the smoker for a bean smoking too! The hit, though, was the babybacks. Everyone agreed they were awesome! Needless to say, we had few left over! I'd be happy smoking babybacks only each time if I could eat that all the time!

Thanks! My step sis was here for dinner with her fiancee... she was asking me if I'd cater her wedding in June! LOL! 300 people! Yeah RIGHT! With a BSKD?!? Not!!! I did find out my step brother welds... hmmm... I'm thinkin' a big ol' smoker! hehehe!

OMG Jeff! That just makes me feel lazy (and hungry) for not firing up the Pro today. :( I am planning on doing four sets of pork spare ribs tomorrow. I'ma jonesin' for Q'd ribs and your photo teasers have sinched the deal.

Hope my bounty turns out as well today. Brisket, Picnic, Beef Short Ribs, Polish Sausage, and a Bob Evans Maple Fatty. 27 #'s of meat smoking away in the 'dera. Going to whip up some Italian Coe Slaw after I clean up a bit then ask the wife what else she would like to go with. Just took two loaves of home made whole wheat rye bread out of the oven (have to stay low carb). For desert I baked almond-cranberry biscotti using splenda instead of sugar.

Funny you should ask... it's a receiver for a remote digital thermometer. It's an Accu-Rite. Doesn't allow for remote transmitter probes though.

My family thought I was nutty for making them wait to eat until I snapped all my pictures. Told them I had to share them with my brothers! I didn't think I was gonna be able to hold 'em all off!

My trip to Minneapolis was changed, and I don't have to leave until early in the morning, so I decided to smoke a pork butt. Its been on since 10:00 last night (12 1/2 hours now) and its at 174*. I can't wait...

And I have a similar thermo reader next to my phone, that does have a remote and leave a probe in the yard. Sux when you get up for work at 4:30 am and see a -7 on the farking readout

When I cooked my first butt in the CookShack, I took pictures of the process and put them on my SBC Yahoo photo site. Later, I did something to annoy my daughter (it easy when she's 16 and you're 47 :) ). She said "Dad, you're wierd... None of my friend's fathers take pictures of their butt and put them on the Internet!" Then she realized what she said and we laughed for at least 5 minutes!
I have an alarm clock that has an outside temperature probe, but the alarm clock projects the time and outside temp onto the ceiling. I don't even have to get out of bed to see that its -7!
