i opened a brand new bag of wood chunks this morning and there is mold on the chunks. should i still use the chunks for my pork shoulder today? What consequences do i face if i do use them?

I've had some like that in the past too. I just used a wire brush and removed as much as I could, and made sure I pre heated my wood good before putting in the fire box. No one ever got sick, so I guess it must have been OK what I did.

Other then killing some of the bacteria pre heating your wood will guarantee you a fast almost immediate combustion of your wood when it is added to the firebox etc.

yeast make twinkies. Mold make blue cheese. Which would YOU rather eat. :)
the whitemold is ok if its just little bits as long as the wood is not soft. If the wood is soft, throw it out. If the mold is growin in big shales on the wood... throw it out.
IMO, The stuff with the little fuzz, i would preheat it good so it ignites immeditely and and let the first few seconds of flame burn out the top of the firebox.

jsn, I'm too late to do you any good, but as Toucan Sam used to say, follow your nose. If the wood smells funky when you burn it, it'll probably make your food tasted that way. If it smells ok burning its probably ok to cook with.

Thanks KC, I ended up just putting several chunks in my charcoal chimney and burned them until the outsides were black then dumped them into the box. It worked out pretty well. Thanks for everyones input, even to the ones that weren't so helpful.
