Superbowl Brisket youbetcha - I trimmed an 11.5# brisket to about 10.5# earlier this evening and rubbed liberally with headcountry. Figure I'll start cooking it tomorrow mid morning. Hope it makes it to Sunday. Serving with Wings, Chili, TX links and turds. Yeehaw

Yummy...my day will consist mostly of working then later, changing brakes...Weeeee
I'm going to go get a brisket this morning and smoke it along with some beef short ribs and a chicken and some fatties and some polish sausage. Oops, forgot, need to do some ABT's too if I can find some good looking japs.

I PLANNED on just doing some ribs for us at home. As I'm walking out the door a little early, my Boss says "Hey, where you going?" "I'm going to go get some babybacks to smoke." "Throw one on for me, I'll pay ya." The person in his office says the same thing. So.....off to Sam's to get some BBs. I stop by a local grocery store first to pick up a few things, and there's a big display case full of briskets @ 97 cents a lb. Damn! Can't pass that up! I call brother JT on the phone to tell him. Then I call the wife, (I've got my Brethren priorities straight, LOL) "we got any freezer space?" "Nope!" "Well, hell, I guess we're cooking brisket with the ribs." Wife says, "While your there, your youngest is out of pulled pork." Double Damn!! "OK, but I'll need freezer space." "Alright, I'll cook up a blackberry cobbler and a hashbrown cassarole out of the stuff in the freezer and that will give you enough space."
So.........a 5 hours rib cook has turned into an all day adventure........
10 lb brisket, 6 lb pork butt, and 5 slabs of babybacks.......
I started at 5 AM this morning, so much for getting SOME rest today!
