Hey guys!! My brother and I have been seriously discussing starting a competition smoke team. I have been coming here for a while now and wanted to join in order to contribute.
I cook on a CharBroil silver smoker.... currently under modification. Will be posting the mods soon. I have been attending some of the local competitions (as a spectator). Will be competing as soon as I can get the scratch... fees and food add up quick.
I am a foodie on the Q side and love trying new meats that I have never smoked before. Duck is likely next. Will keep you posted on that as well.
So, I will share my ideas with you and keep an eye out for you all at the next competition!!

I wanted to say hello to everyone, i have been reading this site for a few days now, and there is fantasic information in here. It is great to see so many people all interested in the art of food...A little about me, i am 34 years old and discovered my passion for cooking about 12 years ago..."Diners, drive-inns and dives" really peaked my interest in true BBQing so I tried for the last few years to slow smoke on my 2 burner grill...I have had some success, but mostly failures...but i keep trying :) I have now invested in a louisiana grill cs 450 and should have it with in the next week...I am like a kid at christmas waiting for my turn to open my gift...

Thanks to the moderators for taking the time to make this site possible.
