View Full Version : Leaving smoker unattended

Might have to cook Saturday rather than Friday. Problem is, my daughter's birthday party is at a location about 20 minutes from the house and would be in the early to mid part of the time the brisket and ribs would be in! I wouldn't be able to be at the smoker for three hours! Is there any method I could use to get the temp to stay up for that length of time? Or should I plan to cook Friday anyway and stick all the meat aside for Satuday? If so, what's the best way to heat it back up?

Jeff- reschedle one or the other- preferable the Que!
No way to do 3 hours unattended without a good basket that you have lots of experience with!

Only other advice I could give is find a time slot that enable you to smoke the meat to 155 or so and finish in the oven.

make a temporary charcoal basket out of 1/4 inch wire mesh. Form it into a box, line 2 sides with foil, or aluminum sheets if ya got. Throw in 6-7 lbs of kingsford and then put 1/2 chimney of lit stuff on top. Leave dapers open till temps are 220. Then close the firebox damper all the way. Should hold ya over. SEarch our archive for temporary charcoal basket. I did this a few years back before i had Als basket.

nope.. did it a few times before i got my basket. Works ok... Just make sure the mesh isn't galvanized. I'm pretty sure further discusion is in our archives.. or maybe in the old yahoo brethren group.

It's there - just gotta dig through it, then weed through all the ball breaking posts about it. Probably some funny stuff though. When I first moved to SoCal I made a chimney with a pie tin and, YES - foil.
