I've heard a few people mention that they trim their packer briskets at home and put them in Foodsaver bags. The standard rolls I think are only 12" wide. Can you really cram a packer in there? Or are there bigger rolls I don't know about? Any tricks? Thanks!

It helps me to have another pair of hands to hold the bag open but that's what I use, the brisket just seems to sorta roll up a little.

They work unless you like to cook it very wide.. Remember, the turn-in box is only 9" wide, so even if you trim to exactly 12", that still allows for 33% shrinkage during cooking.

when it's raw, it doesn't really matter if they curl..

Is that 33% a proven number? Has it been documented?

I'm not sure...If a recall, you're the one that carries a 30' Stanley Fat Max w/Blade Armor tape measure to contests so you can trim your brisket to exact size.

After last Thanksgiving I bought a cart full of turkey bags on sale for $.50 each. No problems fitting a brisket in there!

I always leave the bag a little long so once I get my meat checked in at the comp I can season it up then put it back in the bag (seal it again) and really cram the flavor in.
