Man, I thought I was gonna cry...
You guys remember my smoke a couple of days ago...thought the brisket was overdone. Anyway, I got a chance to use my XMas present, a vacuum sealer....and tested a couple of different ways, with extra juice, with sauce, without, etc...portioned it off and threw it in the freezer.
Well, wife's gone out of town for the week (woohoo!!) so I loaded up the XBOX and threw a frozen bag of pulled brisket with sauce and extra juices into a pot of boiling water. A little while later (got caught up in a game of NCAA football...but that's another story...) I pulled the brisket (had forgotten to warm some bread or something), cut open the bag and poured into a bowl...man, I was in HEAVEN!!!! Instant 'cue!! Think I need to go pull out another bag...easy clean up too!! I owe it all to you guys!!

Foodsaver is the bomb! I'm stuffed from dinner but you flung a craving on me for that 1/2 rack of babybacks only I know about in the back of the freezer! 8)

Drink: Bud Light (Damn I am out of Jack!! - This always seems to happen when the wife is out of town...if not, it's gone by the time she gets back!!)
Entertainment: NCAA 2k5 and Halo 2 on XBOX....and some checking in on the forum...

Works great for us. I can smoke way more than we will eat, even if I used Zip Loc bags and the freezer. Piece of cake to pull a couple of bags for dinner and just warm them up without having to fire up the smoker, or eating some Q that has been in just a little too long. I know ours has paid for itself just being able to take advantage of sales.

Definitely worth it! It's great for leftover Q and all kinds of food. Gives me an excuse to fill that 'dera all the way full & it's good to have some BBQ ready to eat when the craving hits.

Foodsaver is definately worth it!! Boil in a bag IMO is the best way to reheat Q, it doesn't dry it our and you can't screw it up. I have portioned of portions for just me...and then larger ones for when it's me and the wife...if company comes over, I just throw in a couple of bags. My wife doesn't eat a whole lot, and I am trying to scale back my portions, so know I don't ahve to feel guilty if I smoke a brisket and it's only the 2 of us.
And, since we are on the subject...anyone have tips and tricks for the vacuum sealers?? Mine is a FoodSaver and I have noticed that I have to apply alot of pressure and hold it till the pitch changes, otherwise I don't always get a good seal. Also, I have learned that if you spoon (I use a baster) some of the juices in there...and I like to put some sauce in there as well...the vacuum sealer extracting the air will cause the juices to reincorporate with the meat. The result is very juicy Q!!!
I opened another pouch of Q after posting this...couldn't resist. The second had extra juice, but no sauce. Although it was good, it was not as good as the one with extra juice and bbq sauce added before sealing.
Oh...another thought. When I did my ribs, I did them 3-2-1, except it was more like 4-2, then into the fridge (after resting) and eventually into the vacuum bags. My thoughts were to boil in bag reheat and then throw them under the broiler to finish off. Or, if I am in the position to fire up the grill..finish off that way.

You know, I was sure they came in a couple of different ones, so I checked the FoodSaver website...boy, do they! Mine was a gift, so I was happy with anything, I got the FoodSaver V365. I think you can find these (now called the v375) for about $80-$100, but don't quote me on that. There are other models, most are priced on the site about $129-$219, but there is a top of the line one for $319.00. I admit, I would have liked to got the ones with cutters and roll holders built in (more on this later...) Side Story-this was a gift from my mother and step-father, my in-laws had gotten one as well, but we didn't do Chritsmas with them till later, so they returned the one they had bought for me and got me something else...there's was the 800 model darnit! Should have seen which one was better :wink:
Anyway, the higher level models have features like cutters and roll holders, stainless steel finish (sweet), multi level control for sealing delicate items, places to store the hoses and stuff...we'll have to see if anyone here has the better model and can chime in on those. As for the cutter..you cvan buy bags in set sizes (quart, gallon, etc...) or buy a roll and custom cut the sizes. IMO - go for at least the 800 model, I can already tell you, I will be upgrading in a year or so if I can....just pull out this one when parents are around. :wink:
Addedum: OK, after further research, you can also buy separate roll holders and cutters, may do this now and upgrade later. Have 2 sizes of rolls, one in the machine and one in the seperate holder. They also have a stand that can hold 2 rolls behind it and has a cutter up front, you just set your FS on top. Hmmm....need to get some of the bottle stoppers for wine bottles as well....

I have the 550 Model-full retail about $129, Walmart about $100, EBay about $80-90.
It is "mid-range" model.
Cheaper models seemed "cheaper". More expensive models seemed to have more "bells and whistles" than I wanted.
I imagine any of them would work just fine.
