Would love to do Kings Mountain again but don't think I can afford that much time away from the Tea Room. So will do the hometown one where all my family and friends will be judging and then come back to Dallas. :heh:

Well all - it appears that the Inaugural BBQ Capital Cook-off has sold out.
All 50 - that's right 5-0 spots have been taken. :clap2:

A little history - Lexington, NC hosts an annual BBQ festival in the fall of each year that brings in 160,000+ people to the one day festival.

The organization that runs that festival has organized the Inaugural BBQ Capital Cook-off, and initially planned for about 30 teams. They have now closed registration at 50 teams, and are forecasting a HUGE crowd since it is their first cook-off and it is also Easter weekend.

If any teams are looking for a little help for this contest, my (pregnant) wife and I are looking to cook with a team while we can still do this without a distraction (child). We're both experienced judges and table captains, although only amateur/backyard cooks.

I was just on the web site and team number 55 that is five five is Cool Smoke.

So much for a fifty team limit and the competition just got down right interesting.

Bill.....they took on more than 50 teams on my suggestion because of the 50 teams rule as qualifiers for the Jack and A/R...and to make even teams numbers for judging....so blame me and not the organizer. It was a needed move.

As for the teams they brought into the mix...bring them on...we have beaten both of them many times so no prima donna stuff in that crowd.....they just have more time at the game and just better promoting.

You are not cooking this contest so why be so concerned?

AHHHHH....you are correct... it IS Smoke n ice....I had it confused with Smoke n my i's...another team this way! Thanks for the correction!

In the meantime.....show us what you have learned with brisket while in Texas while you are up here! Is it really all salt and pepper or what?

You have got to understand that brisket in Texas is subjective. I have found only one joint in Dallas that is worth a visit. I normally don't eat bbq or cook in TX, did two last month for a warmup prior to the start of the KCBS season for us. So I am probably not a good source for information as my only coment is, "if you can't taste and burp the mequite smoke, then it aint Texas brisket." :boxing:

When I lived in Tx...I found their "BBQ" to be roast beef and catsup....not even close to what we cook in competition. Admittingly, I did not know where to find "good" brisket as there wasn't any around Lake Jackson and Matagorda. Some darn good cajun food however...

Roger (or anybody), what's the 50 team rule that you are referencing? I'm sure I missed something, somewhere.

any sanctioned contest that has a minimum of 50 teams becomes a qualifier for the Jack & AR.

With just 50 teams entered, if one drops out, you have less than 50, however with 55 teams entered, then we stand a good chance of cooking at a State qualifier.

Bring on all teams! there is no team on the list that concerns us - the more the merrier!

So they didn't get the Governor's Proclamation? I thought they had... which would have only needed 25 teams to be a qualifier. :crazy:

I thought maybe the requirements had changed because there are so many contests these days.

Absolutely correct.....North Carolinians haven't a clue about this new fangled meat called brisket but once they taste it, it is the first meat to disappear when catering....way before pork.

Scottie, cook it exactly as you would for the Jack...believe me. Our brisket scores well from here and east of us to the coast. The further West we go it just doesn't score well.

Last year in King's Mountain we totally tanked in brisket....I was dumb enough to put some terrible burnt ends in the box that should have gone to the trash. The result.....35th brisket off 44.....
