Hey Brothers,

I'm helping my manager secure a caterer for her daughters wedding this fall.

Here are the Details:

Onsite at The Refinery in Champaign, IL

Function Date: September 10th, 2011

Function Time: 4:00-10:00pm

Service for 300 people

Caterer must have insurance, food handling certificates, caterer license.

Caterer will be responsible for, service and clean up.

Caterer will need to provide all china.


MENU:

Caterer will provide the following:

Soft drinks, juices, iced tea, coffee, glassware for the dinner service only. (no bar service)

Appetizers x2 ?? Suggestions appreciated

Two carving stations: Smoked Boneless Turkey Breast and Smoked Beef Brisket (4oz each meat per person)

2 vegetable sides (75lbs each veg.)

Mashed Potatoes (100lbs)

Salad station (mixed greens, radish, onion, croutons, bacon, ranch dressing, french dressing, oil & vinegar.) (50lbs)


**On a side note, we were going to originally provide the smoked meats for this wedding and a local caterer was going to provide the rest but that "fell though"....we are on plan B.
