View Full Version : Bears, Cowboys and real Texas BBQ

This past fall my wife surprised me with a trip to Dallas to see the Bears take on the Cowboys. She is a big football fan and really likes Tony Roma, so off we went.

I was brand new to the the smoking world and I had purchased my first smoker the month before. The truth is the only barbecue I have had to this point was ribs or chicken with sauce off of our gas grill. Brisket was something my grandmother could cooked to death. I smoked my first brisket which turn out ok but did not know what was good to reach for.

We got to Dallas in the early in the afternoon, the hotel was filled with Cowboy fans and Dawn and I in our Blue and Orange. There was a lot of fun ribbing going on as we walk around. I had it in my mind that I was going to find some real Texas BBq and see what brisket was supposed to feel and taste like.

I asked at the check in counter, the concierge and the lady who ran the other group that was there for the game. Each time I was given the same response, "You should go to the Hard 8". When we got in the taxi the driver knew exactly where it was and mentioned it was a good choice.

You choose what you want and pay by the pound, I was very impressed with all of the meat. Especially the ribs, they were fantastic. The brisket was tender and juicy and I knew what I had to work towards. Seating was at big long tables and live music was being played, this place is the real deal...

I was introduced to what they called Texas Brush Poppers, shrimp and a slice of jalapeno wrapped with bacon, mmmmm.

I give this place a big :thumb:....

Very cool that you found some good brisket. It can be hard sometimes.
